Taco Stuffed Shells: A Flavor-Packed Twist on a Classic Dish

Instructions:

  1. Preheat Your Oven: Begin by preheating your oven to 350°F (175°C). This will ensure it’s ready for baking once your shells are stuffed and prepared.
  2. Cook the Pasta Shells: In a large pot of salted boiling water, cook the jumbo pasta shells until they are al dente. This typically takes around 10 minutes. Once done, drain and set them aside to cool slightly.
  3. Prepare the Taco Filling: While the pasta is cooking, heat a large skillet over medium-high heat. Add the ground beef and cook until it’s browned and fully cooked, breaking it apart with a spatula as it cooks. Once the beef is browned, drain any excess fat.
  4. Season the Beef: Add the taco seasoning and water to the cooked beef. Stir well and bring it to a simmer. Allow it to cook for about 5 minutes until the mixture thickens slightly.
  5. Combine Ingredients: Once the taco seasoning has been absorbed, stir in the salsa, black beans, and corn. Mix everything together and let it cook for another 2-3 minutes until the mixture is heated through.
  6. Stuff the Shells: Take each cooled pasta shell and stuff it with a generous amount of the taco meat mixture. Arrange the stuffed shells in a large baking dish, placing them side by side.
  7. Add Cheese and Sauce: Pour the enchilada sauce over the stuffed shells, ensuring that each shell is well-coated. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top.
  8. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Garnish and Serve: Once baked, remove the dish from the oven. For an extra burst of flavor, garnish the taco stuffed shells with chopped fresh cilantro. Serve them hot, and don’t forget a dollop of sour cream on the side!
