Ingredients

To make smoked paprika chicken, you will need:

  • 4 chicken thighs or chicken breasts (bone-in or boneless)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 ½ tablespoons smoked paprika
  • 1 teaspoon sweet paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon dried oregano or thyme
  • 1 cup chicken broth
  • ½ cup heavy cream or cooking cream (optional for a creamy version)
  • 1 tablespoon tomato paste
  • Fresh parsley for garnish

Step 1: Prepare the Chicken

Start by patting the chicken pieces dry with paper towels. This step is important because removing excess moisture helps the chicken brown properly when it cooks.

Season the chicken generously with salt, black pepper, and half of the smoked paprika. Gently rub the spices into the chicken so the seasoning coats the surface evenly.

Let the chicken sit for about 10 minutes while you prepare the rest of the ingredients. This allows the seasoning to absorb into the meat.


Step 2: Sear the Chicken

Heat the olive oil in a large skillet or frying pan over medium-high heat.

Once the oil is hot, place the chicken in the pan skin-side down (if using skin-on pieces). Let the chicken cook undisturbed for about 5–7 minutes until it develops a golden-brown crust.

Flip the chicken and cook for another 3–4 minutes on the other side. At this stage the chicken does not need to be fully cooked through, as it will finish cooking later in the sauce.

Remove the chicken from the pan and set it aside on a plate.


Step 3: Cook the Aromatics

Using the same pan (without cleaning it), reduce the heat to medium and add the chopped onion.

Cook the onion for about 3–4 minutes, stirring occasionally, until it becomes soft and translucent. The browned bits left from the chicken will mix with the onions and add extra flavor.

Next, add the minced garlic and cook for about 30 seconds until fragrant.
