Ingredients

For the Salad

  • 1 pint cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 zucchini, chopped
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, finely chopped
  • 1 can sliced black olives, drained
  • 1 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh parsley

For the Dressing

  • 1 bottle Italian dressing
  • 1 teaspoon sesame seeds
  • 1 teaspoon paprika
  • 1 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Kitchen Tools Needed

  • Large pot
  • Colander
  • Sharp knife
  • Cutting board
  • Large mixing bowl
  • Small whisk or spoon

Step-by-Step Instructions

Step 1: Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. The pasta should be tender but still slightly firm because it will continue absorbing dressing as it chills.

Once cooked, drain the spaghetti in a colander and rinse it thoroughly with cold water. Rinsing stops the cooking process and cools the pasta quickly, which is important for cold pasta salads.

Allow the spaghetti to drain completely before moving to the next step.

Step 2: Prepare the Vegetables

While the pasta cools, wash and chop all the vegetables.

Slice the cherry tomatoes in half, dice the cucumber, chop the zucchini, and finely dice the bell peppers and onion. Drain the black olives thoroughly so excess liquid does not water down the salad.

The colorful combination of vegetables gives the salad its beautiful California-inspired appearance and fresh flavor.

Step 3: Make the Dressing

In a medium bowl, combine the Italian dressing, sesame seeds, paprika, celery seed, garlic powder, and onion powder.

Whisk everything together until fully blended. The extra seasonings deepen the flavor and give the dressing a slightly tangy, savory taste that coats the pasta perfectly.
