For the Pasta
- 12 ounces spaghetti or linguine
- Water for boiling
- 1 tablespoon salt
For the Garlic Shrimp Sauce
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons butter
- 2 tablespoons olive oil
- 6 garlic cloves, minced
- 1 teaspoon red pepper flakes (optional)
- Salt to taste
- Black pepper to taste
- Juice of 1 lemon
- ¼ cup pasta water
- ¼ cup fresh parsley, chopped
- Grated Parmesan cheese for serving
Step-by-Step Method
Step 1: Prepare the Shrimp
Start by cleaning the shrimp if they are not already prepared. Remove the shells and devein them carefully. Pat the shrimp dry using paper towels. Dry shrimp cook better and develop more flavor.
Season the shrimp lightly with salt and black pepper. Set them aside while preparing the pasta.
Step 2: Boil the Pasta
Fill a large pot with water and bring it to a boil. Add salt to the water to season the pasta while it cooks.
Add the spaghetti or linguine and cook according to the package instructions until al dente. The pasta should be tender but still slightly firm when bitten.
Before draining the pasta, reserve about ¼ cup of pasta water. This starchy water helps create a silky sauce later.
Drain the pasta and set aside.
Step 3: Cook the Shrimp
Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
Once the butter melts and becomes slightly bubbly, place the shrimp in the pan in a single layer. Cook for about 1 to 2 minutes on each side until the shrimp turn pink and opaque.
Avoid overcooking, as shrimp become rubbery very quickly.
Remove the shrimp from the skillet and place them on a plate temporarily.
Step 4: Make the Garlic Butter Sauce
In the same skillet, lower the heat to medium. Add the remaining butter and minced garlic.
Cook the garlic for about 30 seconds to 1 minute while stirring constantly. The garlic should become fragrant but not browned.
If desired, add red pepper flakes for a little heat.
Pour in the lemon juice and stir gently to combine the flavors.
