Baked Beef & Cheese Egg Rolls (Crispy, Cheesy, Oven-Baked Perfection)
Baked beef and cheese egg rolls are a lighter, oven-baked twist on the classic fried appetizer. They keep all the crunch and flavor you expect, but skip the deep frying. Inside, you get a savory seasoned beef filling, melted cheese, and a crispy golden wrapper that turns perfectly crunchy in the oven or air fryer.
They’re great for parties, game nights, snacks, or even a quick dinner with dipping sauces like sweet chili, garlic mayo, or spicy ketchup.
🛒 Ingredients
For the filling:
- 1 lb (450g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup bell pepper, finely diced (optional but adds flavor)
- 1 tsp soy sauce
- 1 tsp Worcestershire sauce
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional for smoky flavor)
- 1 cup shredded cheddar cheese (or mozzarella for extra meltiness)
For assembling:
- 10–12 egg roll wrappers
- 1 egg (beaten, for sealing)
- Cooking spray or 2 tbsp oil (for brushing)
🔥 Step-by-Step Method
1. Prepare the beef filling
Start by heating a pan over medium heat. Add the ground beef and cook until it begins to brown. Break it apart using a spatula so it cooks evenly.
Once the beef is partially cooked, add the chopped onion, garlic, and bell pepper. Continue cooking until the vegetables soften and the beef is fully browned.
Drain excess grease if needed—this helps prevent soggy egg rolls.
2. Season the mixture
Add soy sauce, Worcestershire sauce, salt, black pepper, and paprika. Stir well so the seasoning coats every bit of beef.
Let it cook for another 2–3 minutes so the flavors blend together.
Turn off the heat and allow the mixture to cool slightly. This is important so the cheese doesn’t melt too early when assembling.
3. Add the cheese
Once the beef mixture is warm (not hot), stir in the shredded cheese.
The cheese should slightly soften and stick to the beef, creating a rich, creamy filling.
