Oven-roasted cauliflower slices are one of those surprisingly satisfying dishes that turn a simple vegetable into something rich, caramelized, and full of texture. When roasted correctly, cauliflower develops crispy golden edges on the outside while staying tender and slightly nutty inside. It works perfectly as a side dish, a vegetarian main, or even as a healthy alternative to steak-style cuts.

Ingredients You’ll Need

  • 1 large head of cauliflower
  • 3–4 tablespoons olive oil
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional, for color and smokiness)
  • 1/2 teaspoon dried oregano or thyme (optional)
  • Fresh parsley or lemon juice for finishing

Step 1: Prepare the Cauliflower

Start by removing the outer green leaves from the cauliflower. Rinse it under cold water and pat it completely dry. Dry cauliflower roasts better because excess moisture can cause steaming instead of browning.

Place the cauliflower stem-side down on a cutting board. Using a large sharp knife, slice it into thick “steaks,” about 3/4 to 1 inch thick. Try to keep the core intact in each slice so they hold together. You’ll usually get 2–4 good center slices, and some florets will naturally break off—save those for roasting too.


Step 2: Preheat the Oven

Set your oven to 425°F (220°C). A high temperature is important because it helps caramelize the cauliflower and create those crispy edges.

Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.


Step 3: Season the Cauliflower

Place the cauliflower slices and loose florets in a large bowl or directly on the baking tray.

Drizzle olive oil evenly over both sides. Make sure each piece is lightly coated—this is what helps with browning.

Sprinkle salt, black pepper, garlic powder, paprika, and herbs over the cauliflower. Gently rub the seasoning in so it sticks well.

For extra flavor, you can also add:

  • A pinch of chili flakes for heat
  • A little grated parmesan for a savory crust
  • A squeeze of lemon juice before or after roasting
