With only a handful of ingredients and minimal preparation, you can create a satisfying dish that tastes fresh and delicious. Whether served chilled on lettuce leaves, tucked into croissants, or spooned over crackers, this salad offers countless serving possibilities.

What Is Imitation Crab?

Imitation crab, often called crab sticks or seafood sticks, is made primarily from finely minced white fish that is blended with starches, seasonings, and natural flavors to mimic the taste and texture of real crab meat. It is fully cooked during production, making it ready to eat directly from the package.

Its mild flavor pairs exceptionally well with creamy dressings, crunchy vegetables, fresh herbs, and light seasonings, making it an excellent ingredient for cold salads.

Ingredients

  • 1 pound imitation crab meat, chopped or shredded
  • ½ cup mayonnaise
  • 2 tablespoons sour cream (optional for extra creaminess)
  • 1 celery stalk, finely diced
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh parsley or dill
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Salt, to taste
  • Optional: diced cucumber, sweet corn, chopped hard-boiled eggs, or diced bell peppers

Equipment Needed

  • Large mixing bowl
  • Small bowl
  • Sharp knife
  • Cutting board
  • Measuring spoons and cups
  • Rubber spatula or spoon

Step-by-Step Preparation

Step 1: Prepare the Crab

Remove the imitation crab from its packaging. Depending on your preference, either shred it by hand for a softer texture or chop it into bite-sized pieces for a chunkier salad.

Place the prepared crab into a large mixing bowl.

Step 2: Prepare the Vegetables

Wash and finely dice the celery to provide a crisp crunch.

Finely chop the red onion so it blends evenly throughout the salad without overpowering the other flavors.

Slice the green onions into thin rounds and chop the fresh parsley or dill.

If adding optional vegetables such as cucumber or bell peppers, dice them into small, even pieces.
