Hobo Casserole: A Simple, Comforting One-Dish Meal

Hobo Casserole is a warm, filling, and budget-friendly dish made with simple ingredients such as ground beef, potatoes, onions, cheese, and a creamy sauce. It is called “hobo” casserole because it uses basic, everyday ingredients that are easy to find and inexpensive to prepare. Despite its simple nature, this casserole is rich in flavor and perfect for family dinners, busy weeknights, or cold days when you want something comforting and homemade.

The beauty of Hobo Casserole is that it does not require complicated cooking skills. Everything is layered in one baking dish, then baked until the potatoes become tender, the meat is flavorful, and the cheese melts beautifully on top. It is the kind of recipe that feels rustic, cozy, and satisfying.

Ingredients Needed

To make a classic Hobo Casserole, you will need:

  • 1 pound ground beef
  • 4 medium potatoes, thinly sliced
  • 1 medium onion, sliced or chopped
  • 1 can cream of mushroom soup
  • ½ cup milk
  • 1 to 1½ cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon butter or oil for greasing the dish
  • Optional: paprika, parsley, mixed vegetables, or bell peppers

Step 1: Prepare the Ingredients

Start by washing and peeling the potatoes. Slice them thinly so they cook evenly in the oven. Thick potato slices may take longer to soften, so try to keep them even and thin.

Next, slice or chop the onion. The onion adds sweetness and flavor as it bakes with the beef and potatoes. You can also prepare any optional vegetables at this stage, such as carrots, peas, corn, or bell peppers.

Step 2: Cook the Ground Beef

Place a skillet over medium heat and add the ground beef. Cook it until it is browned and no longer pink. Break the meat into small pieces while it cooks so it spreads evenly throughout the casserole.

Once the beef is cooked, drain any extra grease. Season the meat with salt, black pepper, garlic powder, and onion powder. This step gives the casserole a stronger and more balanced flavor.

Step 3: Make the Creamy Sauce

In a bowl, mix the cream of mushroom soup with milk. Stir until the sauce becomes smooth. This creamy mixture helps keep the casserole moist while it bakes. It also gives the potatoes a soft, rich texture.

Cream of mushroom soup is commonly used, but cream of chicken or cream of celery soup can also work well. For extra flavor, you may add a small amount of paprika or dried herbs to the sauce.
