Ingredients

For the Roll-Ups

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded or finely chopped
  • 1 ½ cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt

For the Alfredo Sauce

  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg, optional
  • ½ cup mozzarella cheese, for topping

Step 1: Cook the Lasagna Noodles

Bring a large pot of salted water to a boil. Add the lasagna noodles and cook them according to the package instructions until they are al dente. Do not overcook them, because soft noodles can tear when rolling.

Once cooked, drain the noodles and lay them flat on a lightly greased baking sheet or parchment paper. This prevents them from sticking together while you prepare the filling.

Step 2: Prepare the Chicken Filling

In a large mixing bowl, combine the shredded chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, egg, parsley, garlic powder, onion powder, salt, and black pepper.

Mix everything until the filling is creamy and well combined. The egg helps hold the mixture together while baking, while the cheeses create a rich and smooth texture inside each roll-up.

For extra flavor, you can use roasted chicken, grilled chicken, or leftover rotisserie chicken.
