Ingredients

For the Brownie Base

  • 1 cup unsalted butter
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup semi-sweet chocolate chips or chopped chocolate

For the Glossy Chocolate Topping

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Step 1: Prepare the Baking Pan

Preheat the oven to 350°F / 175°C.

Line a square baking pan with parchment paper. An 8×8 inch pan will give thicker brownies, while a 9×9 inch pan will make them slightly thinner.

Leave a little parchment paper hanging over the sides. This makes it easier to lift the brownies out after baking.

Lightly grease the parchment paper with butter or non-stick spray.

Step 2: Melt the Butter and Chocolate

Place the butter in a saucepan over low heat. Let it melt slowly.

Once melted, remove it from the heat and add the chocolate chips or chopped chocolate. Stir until the chocolate melts into the warm butter.

The mixture should become smooth, dark, and glossy.

Do not boil the butter. Gentle heat keeps the chocolate smooth and prevents it from becoming grainy.

Step 3: Mix the Sugars

Pour the melted butter and chocolate mixture into a large mixing bowl.

Add the granulated sugar and brown sugar. Whisk well for about 1 minute.

This step helps create a shiny, slightly crackly brownie top. The sugar also gives the brownies their chewy texture.

Step 4: Add the Eggs

Add the eggs one at a time, whisking well after each addition.

After all the eggs are added, whisk the mixture for another 1 to 2 minutes until it looks thick and smooth.

This step is important because eggs give the brownies structure. Whisking them well also helps create that classic glossy top.

Add the vanilla extract and mix again.

Step 5: Combine the Dry Ingredients

In a separate bowl, combine the flour, cocoa powder, salt, and baking powder.

Mix them together so the cocoa and flour are evenly distributed.

Sifting the cocoa powder is helpful because cocoa can form lumps. A smoother dry mixture gives the brownies a better texture.
