What Makes Slow Cooker Rice Pudding Special?

The slow cooker gives rice pudding a soft and creamy texture because the rice cooks slowly in milk. As it cooks, the starch from the rice naturally thickens the pudding. The result is smooth, rich, and spoonable.

Best Rice to Use

Short-grain or medium-grain white rice works best because it releases more starch and creates a creamier pudding. Arborio rice is also excellent because it makes the pudding thick and rich.

Long-grain rice can be used, but the texture may be slightly less creamy. Avoid instant rice because it can become too soft and mushy during slow cooking.

Step 1: Prepare the Slow Cooker

Start by lightly greasing the inside of the slow cooker with butter or non-stick spray. This helps prevent the rice from sticking to the sides and bottom as it cooks.

A 4-quart slow cooker works well for this recipe. If you use a larger slow cooker, the pudding may cook faster because the mixture spreads out more.

Step 2: Rinse the Rice

Place the rice in a fine mesh strainer and rinse it under cold water for a few seconds.

Rinsing removes extra surface starch and helps prevent the pudding from becoming overly gummy. However, do not rinse too much because some starch is needed to thicken the pudding.

Drain the rice well before adding it to the slow cooker.

Step 3: Add the Milk and Cream

Pour the whole milk and heavy cream into the slow cooker.

Whole milk gives the pudding a smooth base, while heavy cream adds richness. You can use only milk if you want a lighter version, but the texture will not be as luxurious.

For an extra creamy dessert, replace ½ cup of the milk with sweetened condensed milk.
