Ingredients

For the Filling

  • 1 can corned beef, about 340 g, chopped or crumbled
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 1 tablespoon butter
  • 1 tablespoon oil
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder, optional
  • ½ teaspoon mustard powder, optional
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons milk or cream
  • Salt, only if needed
  • ½ cup grated cheddar cheese, optional

For the Pastry

  • 1 sheet shortcrust pastry or puff pastry
  • 1 egg, beaten, for brushing
  • A little flour for rolling

Step 1: Prepare the Potatoes

Peel the potatoes and cut them into small cubes. Place them in a pot of cold salted water.

Bring the water to a boil and cook the potatoes for about 12 to 15 minutes, or until they are soft enough to mash.

Drain the potatoes well. Let them sit for a minute so extra steam escapes. This helps prevent the pie filling from becoming watery.

Mash the potatoes lightly with butter and milk or cream. The texture should be thick, not too smooth and not too wet.

Step 2: Cook the Onion

Place a pan over medium heat. Add the oil and butter.

Once the butter melts, add the chopped onion. Cook for 5 to 7 minutes until the onion becomes soft and lightly golden.

This step adds sweetness and depth to the filling. Raw onion can taste sharp inside the pie, so it is better to cook it first.

Step 3: Add the Corned Beef

Chop or crumble the corned beef into small pieces.

Add it to the pan with the cooked onion. Stir gently and cook for 2 to 3 minutes until the corned beef softens and mixes with the onion.

Corned beef is already cooked, so it does not need a long cooking time. The goal is only to warm it and blend the flavors.
