This dessert is easier than making a traditional pie because the filling is basically a thick chocolate chip cookie dough baked inside a pie dish. It can be made with or without a pie crust, but the crust version gives a beautiful crisp edge and a classic dessert look. Serve it with vanilla ice cream, whipped cream, caramel sauce, or a glass of cold milk.
Ingredients
For the Pie Crust
- 1 unbaked 9-inch pie crust, homemade or store-bought
- 1 teaspoon flour for dusting, if needed
For the Cookie Filling
- ½ cup unsalted butter, melted and slightly cooled
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking powder
- 1 cup semi-sweet chocolate chips
- ½ cup chopped chocolate or extra chocolate chips
- ½ cup chopped walnuts or pecans, optional

Step 1: Prepare the Oven and Pie Dish
Preheat the oven to 350°F / 175°C.
Place the pie crust into a 9-inch pie dish. Press it gently into the bottom and sides of the dish. Trim any extra dough from the edges, then crimp the border if you want a decorative look.
If using a store-bought crust, let it sit at room temperature for a few minutes before unfolding so it does not crack.
Place the prepared crust in the refrigerator while you make the filling. A chilled crust holds its shape better while baking.
Step 2: Melt the Butter
Melt the butter in a small saucepan or microwave-safe bowl.
Let it cool for 5 to 10 minutes before using. The butter should still be liquid, but not hot. If the butter is too hot, it can cook the eggs or make the filling greasy.
Melted butter gives this pie a dense, chewy, gooey texture instead of a cakey one.
Step 3: Mix the Sugars and Butter
In a large mixing bowl, add the melted butter, brown sugar, and granulated sugar.
Whisk until the mixture becomes smooth and glossy.
Brown sugar adds moisture and a caramel-like flavor, while granulated sugar helps create a slightly crisp top. Using both gives the pie the best cookie texture.
Step 4: Add Eggs and Vanilla
Add the eggs one at a time, whisking well after each addition.
Then add the vanilla extract and mix again.
