Slow Cooker French Onion Potato Bake: A Rich, Cheesy, Comforting Side Dish
Slow Cooker French Onion Potato Bake is a warm, savory potato dish made with tender sliced potatoes, sweet onion flavor, creamy sauce, melted cheese, and slow-cooked comfort. It takes the deep flavor of French onion soup and combines it with the soft, hearty texture of a potato casserole. The result is a rich, cheesy, golden side dish that works beautifully for family dinners, holidays, potlucks, or cozy weekend meals.
The best part is that the slow cooker does most of the work. Once the potatoes, onions, sauce, and cheese are layered inside, everything cooks gently until the potatoes become tender and the flavors blend together.
What Makes This Recipe Special?
French onion flavor is known for its deep, savory taste. Traditional French onion soup gets its flavor from onions, broth, butter, and herbs. In this recipe, those same flavors are used to season thinly sliced potatoes.
As the dish cooks slowly, the potatoes absorb the onion soup mixture, butter, cream, and cheese. The edges become soft and flavorful, while the top turns cheesy and rich. It is like a mix between scalloped potatoes, cheesy potato casserole, and French onion soup.
Ingredients
Main Ingredients
- 2 ½ to 3 pounds potatoes, thinly sliced
- 2 large onions, thinly sliced
- 3 tablespoons butter
- 2 cloves garlic, minced
- 1 packet French onion soup mix
- 1 cup beef broth or chicken broth
- ½ cup heavy cream
- ½ cup sour cream
- 1 ½ cups shredded mozzarella cheese
- 1 cup shredded Gruyère, Swiss, or cheddar cheese
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- ½ teaspoon garlic powder
- Salt to taste
- 1 tablespoon chopped parsley, optional for garnish
Optional Add-Ins
- Crispy bacon pieces
- Cooked shredded chicken
- Mushrooms
- Caramelized onions
- Parmesan cheese
- A splash of Worcestershire sauce
Step 1: Choose and Slice the Potatoes
Start by choosing the right potatoes. Yukon gold potatoes are excellent because they become creamy and buttery when cooked. Russet potatoes also work well because they soften nicely and absorb flavor.
Wash the potatoes well. You can peel them if you want a smoother texture, or leave the skins on for a rustic dish.
Slice the potatoes thinly, about ⅛ to ¼ inch thick. Try to keep the slices even so they cook at the same speed. A mandoline slicer makes this easier, but a sharp knife works too.
Step 2: Prepare the Onions
Peel the onions and slice them thinly.
For deeper flavor, melt the butter in a skillet over medium heat and cook the onions for 8 to 10 minutes until they soften and begin to turn golden. Add the minced garlic during the last minute.
This step is optional, but it makes the dish taste richer. If you are short on time, you can add the raw sliced onions directly to the slow cooker.
Step 3: Make the French Onion Sauce
In a mixing bowl, combine the French onion soup mix, broth, heavy cream, sour cream, black pepper, thyme, and garlic powder.
Stir until smooth.
The soup mix gives the dish its signature onion flavor, while the broth helps the potatoes cook. The cream and sour cream make the sauce rich and smooth.
Taste the mixture before adding extra salt. French onion soup mix can already be salty, so add salt carefully.
