Brown Sugar Glazed Kielbasa: Sticky BBQ Sausage Burnt Ends Recipe

Brown Sugar Glazed Kielbasa, also known as Sticky BBQ Sausage Burnt Ends, is a sweet, smoky, savory appetizer made with sliced kielbasa sausage, brown sugar, barbecue sauce, butter, and simple seasonings. The sausage pieces are cooked until the edges become caramelized, sticky, and slightly crisp, while the inside stays juicy and tender.

This recipe is perfect for game day, parties, family gatherings, potlucks, cookouts, or quick weekend snacks. It gives you the flavor of barbecue burnt ends without needing brisket or hours of smoking. With just a few ingredients, kielbasa transforms into bite-sized pieces coated in a glossy, sweet BBQ glaze.

What Makes This Recipe Special?

The magic comes from the balance of flavors. Kielbasa is already smoky and savory, so when it is coated with brown sugar and barbecue sauce, it becomes rich, sticky, and deeply flavorful. The brown sugar melts into the sauce, the butter adds shine and richness, and the heat caramelizes everything into a beautiful glaze.

Each bite has a slightly crisp outside, a juicy center, and a sweet-smoky BBQ coating. It is simple enough for beginners but tasty enough to serve at any gathering.

Ingredients

Main Ingredients

  • 2 pounds kielbasa sausage, sliced into thick rounds
  • 1 cup barbecue sauce
  • ½ cup brown sugar
  • 3 tablespoons butter, melted
  • 1 tablespoon Dijon mustard or yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper, optional

Optional Garnish

  • Chopped parsley
  • Green onions
  • Sesame seeds
  • Extra BBQ sauce for drizzling

Step 1: Choose and Slice the Kielbasa

Start with smoked kielbasa or fully cooked sausage. Slice it into thick rounds, about ½ inch to ¾ inch thick.

Do not slice the sausage too thin. Thicker pieces hold their shape better and give you a juicy center with caramelized edges.

Place the sliced kielbasa in a large mixing bowl.

Step 2: Prepare the BBQ Glaze

In a separate bowl, combine the barbecue sauce, brown sugar, melted butter, mustard, Worcestershire sauce, garlic powder, onion powder, smoked paprika, black pepper, and cayenne pepper if using.

Stir until the brown sugar begins to dissolve and the sauce looks smooth.

The glaze should be thick, sweet, and slightly tangy. The mustard helps balance the sweetness, while the smoked paprika adds a deeper BBQ flavor.

Step 3: Coat the Sausage

Pour the glaze over the sliced kielbasa.

Toss everything together until each piece is well coated. Make sure the sauce gets around all sides of the sausage.

Let the sausage sit in the glaze for 10 to 15 minutes if you have time. This gives the flavor a chance to soak in slightly before cooking.

Step 4: Arrange the Sausage

Preheat your oven to 375°F / 190°C.

Line a baking sheet with foil or parchment paper for easier cleanup. Place a wire rack over the baking sheet if you want better air circulation and crispier edges.

Spread the kielbasa pieces in a single layer. Do not pile them on top of each other, because they need space to caramelize.

Pour any extra glaze over the sausage pieces.
