Slow Cooker Hamburger Soup: A Hearty Step-by-Step Comfort Food Recipe

Slow Cooker Hamburger Soup is a warm, filling, and easy homemade meal made with ground beef, vegetables, potatoes, tomatoes, broth, and simple seasonings. It is the kind of soup that tastes like comfort food but does not require much work. Once the ingredients are prepared and added to the slow cooker, the soup cooks slowly until the vegetables are tender and the flavors blend together beautifully.

This recipe is perfect for busy weekdays, cold evenings, family dinners, meal prep, or anytime you want a simple dish that feels homemade and satisfying. It is rich, savory, and full of texture, with tender potatoes, soft vegetables, seasoned beef, and a flavorful tomato-based broth.

Why Slow Cooker Hamburger Soup Is So Good

The slow cooker makes this soup especially flavorful because the ingredients have time to cook gently. The ground beef adds a hearty, savory base, while the vegetables absorb the broth and seasonings. The potatoes make the soup more filling, and the tomatoes give it a slightly tangy, comforting taste.

It is also a flexible recipe. You can use fresh vegetables, frozen vegetables, extra potatoes, pasta, rice, or beans depending on what you have at home.

Ingredients

Main Ingredients

  • 1 ½ pounds ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup green beans, fresh or frozen
  • 1 cup corn, fresh, frozen, or canned
  • 1 can diced tomatoes, about 14–15 oz
  • 1 can tomato sauce, about 8 oz
  • 4 cups beef broth
  • 1 tablespoon tomato paste, optional for deeper flavor
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce

Optional Add-Ins

  • 1 cup peas
  • 1 cup cooked pasta
  • 1 cup cooked rice
  • 1 can kidney beans or white beans, drained
  • ½ teaspoon chili flakes for heat
  • Fresh parsley for garnish

Step 1: Brown the Ground Beef

Start by placing a large skillet over medium-high heat.

Add the ground beef and break it apart with a spoon. Cook until the meat is fully browned and no pink remains.

Browning the beef before adding it to the slow cooker gives the soup a better flavor. It also allows you to drain away excess grease, which keeps the soup from becoming oily.

Once the beef is cooked, drain the fat and transfer the meat to the slow cooker.

Step 2: Cook the Onion and Garlic

In the same skillet, add the diced onion. Cook for 2 to 3 minutes until it begins to soften.

Add the minced garlic and cook for another 30 seconds, just until fragrant.

This step adds extra flavor to the soup. Garlic can burn quickly, so stir it gently and do not cook it too long.

Transfer the onion and garlic to the slow cooker with the beef.

Step 3: Prepare the Vegetables

Peel and dice the potatoes into small bite-sized cubes. Slice the carrots, chop the celery, and prepare the green beans and corn.

Try to cut the potatoes and carrots into similar-sized pieces so they cook evenly.

Add all the vegetables to the slow cooker.

If you are using frozen vegetables, you can add them directly without thawing.
