Slow-Cooker Honey Garlic Pork Chops: A Tender, Sweet, and Savory Dinner Recipe

Slow-Cooker Honey Garlic Pork Chops are a simple, comforting meal made with tender pork chops cooked slowly in a rich sauce of honey, garlic, soy sauce, broth, and seasonings. The pork becomes juicy and flavorful as it absorbs the sweet and savory sauce, making it perfect for busy weeknights, family dinners, or meal prep.

This recipe is especially useful because the slow cooker does most of the work. After a quick seasoning and optional sear, the pork chops cook gently until tender. The sauce thickens at the end into a glossy honey garlic glaze that tastes delicious over rice, mashed potatoes, noodles, or vegetables.

Why This Recipe Works

The slow cooker keeps the pork chops moist by cooking them gently in sauce. Honey adds sweetness, garlic gives deep savory flavor, soy sauce adds saltiness and richness, and a little vinegar or lemon juice balances everything with mild acidity.

The result is not just plain cooked pork. It is soft, flavorful pork covered in a sticky, glossy sauce that tastes homemade and satisfying.

Ingredients

For the Pork Chops

  • 4 to 6 pork chops, bone-in or boneless
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 tablespoon olive oil, optional for searing

For the Honey Garlic Sauce

  • ½ cup honey
  • ⅓ cup soy sauce
  • ½ cup chicken broth
  • 4 to 5 garlic cloves, minced
  • 2 tablespoons ketchup
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 tablespoon brown sugar, optional for extra sweetness
  • ½ teaspoon ground ginger, optional
  • ¼ teaspoon red pepper flakes, optional for a little heat

For Thickening the Sauce

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Optional Garnish

  • Chopped parsley
  • Green onions
  • Sesame seeds
  • Extra black pepper

Step 1: Choose the Right Pork Chops

You can use boneless or bone-in pork chops for this recipe.

Bone-in pork chops usually stay juicier because the bone helps protect the meat while it cooks. Boneless pork chops are easier to eat and cook a little faster.

For the best result, choose pork chops that are medium-thick. Very thin pork chops can dry out more easily, even in a slow cooker.

Step 2: Season the Pork

Pat the pork chops dry with paper towels. This helps the seasoning stick better.

Sprinkle both sides with salt, black pepper, garlic powder, onion powder, and paprika.

Rub the seasoning gently into the meat so every piece is evenly coated.

This first layer of seasoning gives the pork flavor before it even touches the sauce.

Step 3: Sear the Pork Chops for Extra Flavor

This step is optional, but it makes the dish taste better.

Heat olive oil in a skillet over medium-high heat. Add the pork chops and sear them for about 1 to 2 minutes per side, just until lightly browned.

You do not need to cook them through. The goal is only to create a golden surface.

Searing adds deeper flavor and improves the final texture of the pork chops.
