Cheesy Bacon Potato Casserole: A Comforting Step-by-Step Family Recipe
Cheesy Bacon Potato Casserole is a rich, hearty, and satisfying dish made with tender potatoes, crispy bacon, melted cheese, creamy sauce, and simple seasonings. It is the kind of recipe that feels warm, homemade, and perfect for family dinners, potlucks, holidays, or weekend comfort meals.
This casserole combines everything people love about loaded baked potatoes in one easy baked dish. The potatoes become soft and flavorful, the cheese melts into every layer, and the bacon adds a salty, smoky crunch. It can be served as a side dish with chicken, steak, burgers, or roasted vegetables, but it is also filling enough to enjoy on its own.
Why This Casserole Is So Delicious
The secret to a good cheesy bacon potato casserole is layering flavor. The potatoes should be cooked until tender, the bacon should be crisp, and the cheese should melt smoothly into the creamy mixture. A good casserole should not be dry or watery. It should be creamy inside, golden on top, and full of savory flavor in every bite.
This recipe is also easy to customize. You can make it extra cheesy, add sour cream for a loaded-potato flavor, mix in green onions, or add a little spice with paprika or chili flakes.
Ingredients
Main Ingredients
- 6 medium potatoes, peeled and diced
- 8 slices bacon, cooked and chopped
- 2 cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 cup sour cream
- ½ cup heavy cream or milk
- 4 tablespoons butter, melted
- 2 cloves garlic, minced
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ¾ teaspoon salt, or to taste
- ¼ cup chopped green onions or parsley
Optional Add-Ins
- ½ cup cream cheese, softened
- ½ cup cooked chicken, shredded
- ½ cup corn
- ½ cup chopped bell peppers
- ¼ teaspoon chili flakes
- Extra cheese for topping
Step 1: Prepare the Potatoes
Start by washing and peeling the potatoes. Cut them into small cubes, about 1 inch in size. Try to keep the pieces even so they cook at the same speed.
Russet potatoes are a great choice because they become soft and fluffy. Yukon gold potatoes also work well because they have a naturally buttery texture.
Place the diced potatoes in a large pot and cover them with cold water. Add a little salt to the water.
Step 2: Boil the Potatoes
Bring the potatoes to a boil over medium-high heat. Cook them for about 8 to 12 minutes, or until they are just fork-tender.
Do not overcook them until they fall apart. They will continue cooking in the oven, so they should be soft but still hold their shape.
Drain the potatoes well and let them sit for a few minutes so extra steam can escape. This helps prevent the casserole from becoming watery.
Step 3: Cook the Bacon
While the potatoes are cooking, prepare the bacon.
Place the bacon slices in a skillet over medium heat. Cook until crispy and golden on both sides.
Transfer the bacon to a paper towel-lined plate to drain excess grease. Once cooled, chop it into small pieces.
Save a little bacon for the topping. This gives the casserole a nice crispy finish after baking.
Step 4: Make the Creamy Cheese Mixture
In a large mixing bowl, combine the sour cream, heavy cream or milk, melted butter, minced garlic, garlic powder, onion powder, paprika, salt, and black pepper.
Stir until smooth.
Add 1 ½ cups of cheddar cheese and the mozzarella cheese. Mix again until the cheese is evenly combined with the creamy sauce.
If you want the casserole extra rich, add softened cream cheese and mix until smooth.
Step 5: Combine the Potatoes and Sauce
Add the drained potatoes to the bowl with the creamy cheese mixture.
Gently fold everything together until the potatoes are fully coated. Be careful not to mash the potatoes too much.
Add most of the chopped bacon and half of the green onions or parsley. Stir gently again.
The mixture should look thick, creamy, and cheesy.
