No-Bake Chocolate Caramel Millionaire’s Slice: A Rich Layered Dessert Made Step by Step
No-Bake Chocolate Caramel Millionaire’s Slice is a luxurious dessert made with three beautiful layers: a buttery biscuit base, a thick golden caramel center, and a smooth chocolate topping. It has the richness of classic millionaire’s shortbread, but this version does not require baking, making it easier and more convenient for home kitchens.
The base is crumbly and firm, the caramel layer is sweet and chewy, and the chocolate topping adds a deep, glossy finish. It is perfect for parties, dessert trays, family gatherings, holidays, or anytime you want a make-ahead treat that looks impressive and tastes indulgent.
Why This Recipe Is Special
The charm of millionaire’s slice comes from the contrast between simple ingredients and rich results. Crushed biscuits replace traditional baked shortbread, so the base sets in the refrigerator instead of the oven. The caramel is cooked until thick and silky, then poured over the biscuit layer. Finally, melted chocolate is spread over the top and chilled until firm.
Each bite gives you crunch, creaminess, sweetness, and chocolate in one neat square.
Ingredients
For the Biscuit Base
- 300 g digestive biscuits, graham crackers, or plain tea biscuits
- 120 g unsalted butter, melted
- 2 tablespoons brown sugar
- ¼ teaspoon salt
For the Caramel Layer
- 1 can sweetened condensed milk, about 397 g
- 100 g unsalted butter
- 100 g brown sugar
- 2 tablespoons golden syrup, corn syrup, or honey
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
For the Chocolate Topping
- 250 g milk chocolate, dark chocolate, or semi-sweet chocolate
- 1 tablespoon butter or coconut oil
- Optional: flaky sea salt for topping
Step 1: Prepare the Pan
Line an 8-inch or 9-inch square pan with parchment paper. Leave extra paper hanging over the sides so you can lift the slice out easily later.
This step is important because caramel can stick strongly to the pan. Parchment paper helps keep the layers neat and makes cutting easier.
Step 2: Crush the Biscuits
Place the biscuits in a food processor and blend until they become fine crumbs.
If you do not have a food processor, place the biscuits in a sealed plastic bag and crush them with a rolling pin.
The crumbs should be mostly fine, but a few tiny pieces are fine because they add texture to the base.
Step 3: Make the Biscuit Base
Put the biscuit crumbs into a mixing bowl. Add the brown sugar and salt, then pour in the melted butter.
Mix until the crumbs look like wet sand. When pressed between your fingers, the mixture should hold together.
If it feels too dry, add one more tablespoon of melted butter. If it feels too oily, add a few more crushed biscuits.
