  • 1 ½ pounds ground chicken
  • 1 cup breadcrumbs

  • 1 teaspoon paprika

  • 1 tablespoon olive oil

For the Cheesy Center

  • 1 cup mozzarella cheese, cut into small cubes
  • ½ cup cheddar cheese cubes, optional
  • 2 tablespoons cream cheese, optional for extra creaminess

For Baking and Topping

  • 1 ½ cups marinara sauce or tomato pasta sauce
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped parsley
  • Extra parmesan cheese for serving

Step 1: Prepare the Cheese Filling

Start by cutting the mozzarella into small cubes. Each cube should be small enough to fit inside a meatball without breaking through the chicken mixture.

If you want a stronger flavor, mix mozzarella with cheddar. Mozzarella gives the stretchy melted center, while cheddar adds a sharper taste.

Place the cheese cubes in the freezer for about 10 to 15 minutes while you prepare the meat mixture. Chilling the cheese helps it stay inside the meatballs while baking instead of melting too quickly and leaking out.

Step 2: Make the Chicken Meatball Mixture

In a large bowl, add the ground chicken, breadcrumbs, egg, parmesan cheese, minced garlic, onion, parsley, Italian seasoning, paprika, garlic powder, onion powder, salt, black pepper, and olive oil.

Mix everything gently using your hands or a spoon. Do not overmix, because overworking the meat can make the meatballs dense and tough.

The mixture should be soft but firm enough to shape. If it feels too wet, add a little more breadcrumbs. If it feels too dry, add a spoonful of milk, olive oil, or cream cheese.

Step 3: Shape the Meatball Bombs

Take a small amount of the chicken mixture and flatten it in your palm.

Place one cube of cheese in the center. Carefully fold the chicken mixture around the cheese and roll it into a ball.

Make sure the cheese is fully covered. If there are cracks, the cheese may leak out during baking.

Repeat until all the meatballs are formed. Try to keep them similar in size so they bake evenly.

A good size is about 1 ½ to 2 inches wide.
