Apricot Cream Cheese Sweet Rolls: A Soft, Fruity, Creamy Step-by-Step Recipe
Apricot Cream Cheese Sweet Rolls are soft homemade rolls filled with a smooth cream cheese layer and sweet apricot filling, then baked until golden and finished with a light glaze. They are rich, fluffy, slightly tangy, and beautifully fruity. The combination of soft bread dough, creamy cheese, and bright apricot makes these rolls perfect for breakfast, brunch, holidays, tea time, or a special homemade dessert.
These rolls are similar to cinnamon rolls in shape, but instead of cinnamon sugar, they are filled with cream cheese and apricot preserves. The result is lighter, fruitier, and elegant, with a bakery-style look and a comforting homemade taste.
Ingredients
For the Dough
- 3 ½ cups all-purpose flour
- 2 ¼ teaspoons instant yeast
- ¼ cup granulated sugar
- ½ teaspoon salt
- ¾ cup warm milk
- ¼ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
For the Cream Cheese Filling
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice, optional
- 1 tablespoon all-purpose flour
For the Apricot Filling
- ¾ cup apricot preserves or apricot jam
- ½ cup chopped dried apricots, optional
- 1 teaspoon lemon zest, optional
- ¼ teaspoon cinnamon, optional
For the Glaze
- 1 cup powdered sugar
- 2 to 3 tablespoons milk or cream
- ½ teaspoon vanilla extract
- 1 teaspoon apricot jam, optional for extra flavor
Step 1: Prepare the Dough
In a large mixing bowl, combine the flour, yeast, sugar, and salt. Stir everything together.
In a separate bowl, mix the warm milk, melted butter, egg, and vanilla extract. The milk should be warm, not hot. If it is too hot, it can damage the yeast.
Pour the wet ingredients into the dry ingredients. Mix until a soft dough begins to form.
If the dough feels too sticky, add a little more flour, one tablespoon at a time. If it feels too dry, add a small splash of milk.
Step 2: Knead the Dough
Transfer the dough to a lightly floured surface.
Knead for about 8 to 10 minutes until the dough becomes smooth, soft, and elastic. You can also use a stand mixer with a dough hook for about 5 to 6 minutes.
The dough should feel slightly tacky but not wet. A soft dough creates fluffy rolls, so avoid adding too much flour.
Step 3: Let the Dough Rise
Place the dough in a lightly greased bowl. Cover it with a clean towel or plastic wrap.
Let it rise in a warm place for about 1 to 1 ½ hours, or until it doubles in size.
This first rise is important because it gives the rolls their soft, airy texture.
Step 4: Make the Cream Cheese Filling
While the dough rises, prepare the filling.
In a bowl, beat the softened cream cheese until smooth. Add the sugar, vanilla extract, lemon juice, and flour.
Mix until creamy and spreadable.
The flour helps stabilize the cream cheese filling while baking, so it does not become too runny.
