Marinated Cucumber, Tomato & Onion Salad: A Fresh and Flavorful Step-by-Step Recipe

Marinated Cucumber, Tomato & Onion Salad is a refreshing, colorful, and simple side dish made with crisp cucumbers, juicy tomatoes, and thinly sliced onions tossed in a tangy homemade marinade. This classic salad is loved for its bright flavors, crunchy texture, and ability to complement almost any meal.

The secret to this salad is the marination process. As the vegetables sit in the dressing, they release their natural juices and absorb the flavors of vinegar, herbs, garlic, and seasonings. The result is a refreshing salad that tastes even better after a few hours in the refrigerator.

This recipe is perfect for summer barbecues, picnics, potlucks, family dinners, or as a healthy side dish for grilled meats, sandwiches, and seafood.

Why This Salad Is So Special

Unlike a regular vegetable salad that is dressed right before serving, a marinated cucumber, tomato, and onion salad develops its flavor over time.

The cucumbers provide a cool crunch, tomatoes add sweetness and juiciness, and onions bring a sharp, savory bite. The homemade marinade balances everything with acidity, herbs, and a touch of sweetness.

It is:

  • Fresh and refreshing
  • Easy to prepare
  • Naturally healthy
  • Budget-friendly
  • Perfect for making ahead

Ingredients

For the Salad

  • 3 large cucumbers, thinly sliced
  • 4 ripe tomatoes, cut into wedges or chunks
  • 1 large red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped (optional)
  • ½ cup feta cheese, crumbled (optional)

For the Marinade Dressing

  • ½ cup olive oil
  • ¼ cup white vinegar or apple cider vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon honey or sugar
  • 2 cloves garlic, minced
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon red pepper flakes (optional)

Step 1: Prepare the Cucumbers

Wash the cucumbers thoroughly and slice them into thin rounds.

You can leave the skin on for extra color and texture, especially if using English cucumbers. If using regular cucumbers with thick skin or many seeds, you may peel them partially and remove the seeds.

Place the cucumber slices in a large bowl.

Helpful Tip:

If you want extra crisp cucumbers, sprinkle them with a small amount of salt and let them sit for 15 minutes. Drain the released water before adding the marinade. This prevents the salad from becoming watery.

Step 2: Prepare the Tomatoes

Wash the tomatoes and cut them into bite-sized pieces.

Cherry tomatoes can also be used by simply cutting them in half.

Choose tomatoes that are ripe but firm. Very soft tomatoes release too much liquid and can make the salad watery.

Add the tomatoes to the bowl with the cucumbers.

Step 3: Slice the Onion

Peel the onion and slice it into thin rings or half-moons.

Red onions are commonly used because they have a beautiful colour and slightly sweet flavor. However, white or yellow onions can also work.

If you prefer a milder onion taste:

  1. Place the sliced onions in a bowl of cold water.
  2. Let them soak for 10 minutes.
  3. Drain well before adding them to the salad.

This removes some of the sharpness while keeping the onion flavor.
