Step 1: Prepare the Pineapple

Open the can of crushed pineapple and drain it well.

This step is very important because excess liquid can make the pie filling too soft and prevent it from setting properly.

Place the pineapple in a fine strainer and press gently with a spoon to remove as much juice as possible.

Set the drained pineapple aside while preparing the creamy filling.


Step 2: Soften the Cream Cheese

Remove the cream cheese from the refrigerator about 30 to 60 minutes before making the pie.

Softened cream cheese blends much more easily and creates a smooth filling without lumps.

Place the cream cheese in a mixing bowl and beat it with an electric mixer until it becomes creamy and smooth.
