For the Creamy Dip Base
- 16 oz (450 g) cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup mayonnaise
- 3–4 fresh jalapeños, finely chopped
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
For the Topping
- ½ cup shredded cheddar cheese
- ¼ cup grated parmesan cheese
- ¼ cup breadcrumbs (optional, for a crispy topping)
- Chopped green onions or parsley for garnish
Optional Additions
- ½ cup cooked bacon pieces for a smoky flavor
- ½ teaspoon chili flakes for extra heat
- ½ cup corn for sweetness and texture
- ½ cup diced green chilies for more flavor
- A squeeze of lime juice for freshness
Step 1: Prepare the Jalapeños
Begin by washing the jalapeños and removing the stems.
For a milder dip, cut the jalapeños in half and remove the seeds and inner white membranes. Most of the heat is stored there.
For a spicier version, keep some or all of the seeds.
Finely chop the jalapeños into small pieces. Smaller pieces distribute the spicy flavor evenly throughout the dip.
Step 2: Soften the Cream Cheese
Remove the cream cheese from the refrigerator about 30–60 minutes before preparing the dip.
Softened cream cheese mixes much more easily and creates a smoother texture.
Place the cream cheese in a large mixing bowl and stir it until creamy.
If you forget to soften it, you can microwave it for about 15 seconds at a time until slightly softened, but avoid melting it completely.
Step 3: Mix the Creamy Base
Add the sour cream and mayonnaise to the softened cream cheese.
Mix everything together until smooth and well combined.
The sour cream adds a slight tanginess, while the mayonnaise creates a richer and silkier texture.
Continue mixing until there are no large lumps of cream cheese remaining.
