Swedish Apple Cake: A Soft, Buttery Scandinavian Dessert with Fresh Apples
Swedish Apple Cake, known as Äppelkaka in Sweden, is a simple yet elegant dessert that celebrates the natural sweetness of apples. Unlike heavy American-style apple cakes, the Swedish version is often lighter, softer, and beautifully balanced with warm spices, buttery richness, and tender apple slices baked into a delicate cake.
This traditional Scandinavian dessert is perfect for autumn gatherings, afternoon coffee breaks (fika), family celebrations, or a cozy homemade treat. The cake has a moist crumb, a golden buttery surface, and layers of soft cinnamon-spiced apples that melt into the cake as it bakes.
Served warm with whipped cream, vanilla custard, or a scoop of ice cream, Swedish Apple Cake is a comforting dessert that feels both rustic and refined.
Why Swedish Apple Cake Is Special
The charm of Swedish Apple Cake comes from its simplicity. It does not rely on complicated techniques or excessive sweetness. Instead, it highlights a few quality ingredients:
- Fresh apples provide natural sweetness and moisture.
- Butter creates a rich, tender texture.
- Cinnamon adds warmth and traditional Scandinavian flavor.
- A simple cake batter allows the fruit to be the star.
The result is a dessert that is soft, fragrant, and perfect with a cup of coffee or tea.
Ingredients
For the Apple Layer
- 3 to 4 medium apples (such as Granny Smith, Honeycrisp, Pink Lady, or Gala)
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon butter, melted
For the Cake Batter
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- ½ teaspoon ground cinnamon
- ¼ teaspoon cardamom (optional, but traditional in Scandinavian baking)
For the Topping
- 2 tablespoons brown sugar
- 2 tablespoons sliced almonds or chopped walnuts (optional)
- A sprinkle of cinnamon
Step 1: Prepare the Baking Pan
Preheat your oven to 350°F (175°C).
Grease a 9-inch round cake pan or springform pan with butter.
You can also line the bottom with parchment paper to make removing the cake easier after baking.
A springform pan works especially well because the cake is soft and filled with fruit.
Step 2: Prepare the Apples
Wash and peel the apples.
Remove the cores and slice them into thin wedges or slices.
The slices should not be too thick because they need to soften during baking.
Place the apple slices in a bowl and add:
- Sugar
- Cinnamon
- Lemon juice
- Melted butter
Toss gently until all the apples are coated.
The lemon juice prevents browning and adds a slight freshness that balances the sweetness.
Set the apples aside while preparing the batter.
Step 3: Mix the Dry Ingredients
In a medium bowl, combine:
- Flour
- Baking powder
- Salt
- Cinnamon
- Cardamom (if using)
Whisk everything together.
Mixing the dry ingredients separately helps distribute the baking powder and spices evenly throughout the cake.
