Garbage Bread Recipe: A Cheesy, Flavor-Packed Stuffed Bread Made Step by Step
Garbage Bread is a fun, comforting, and incredibly customizable recipe made by stuffing pizza dough with a delicious mixture of meats, cheeses, vegetables, and flavorful seasonings, then baking it until golden brown and crispy on the outside.
Despite its unusual name, Garbage Bread is anything but messy. The name comes from the idea that you can use a variety of leftover ingredients or whatever you have available in your kitchen. It is similar to a stuffed stromboli or a savory bread roll, but with endless possibilities for fillings.
This recipe is perfect for game nights, family dinners, parties, potlucks, or a quick weekend meal. Every slice reveals a warm, cheesy filling wrapped inside soft, golden bread.
What Makes Garbage Bread So Special?
The best thing about Garbage Bread is its flexibility. There is no single “correct” filling. You can use leftover cooked meats, different cheeses, vegetables, or sauces to create your own version.
A classic Garbage Bread usually contains:
- Seasoned ground beef or sausage
- Pepperoni
- Melted mozzarella cheese
- Pizza sauce or creamy sauce
- Vegetables like onions and peppers
The result is a crispy bread exterior with a warm, savory, cheesy center.
Ingredients
For the Dough
- 1 pound pizza dough (store-bought or homemade)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
For the Filling
- 1 pound ground beef or Italian sausage
- 1 small onion, finely diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ½ cup grated parmesan cheese
- ½ cup sliced pepperoni
- ½ cup pizza sauce or marinara sauce
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
For the Topping
- 1 egg, beaten (for egg wash)
- 1 tablespoon melted butter
- Extra parmesan cheese
- Fresh parsley or Italian herbs
Step 1: Prepare the Dough
If using refrigerated pizza dough, remove it from the refrigerator about 30 minutes before starting. Allowing the dough to warm slightly makes it easier to stretch without tearing.
Lightly flour your work surface and place the dough on it.
Using a rolling pin, roll the dough into a large rectangle, approximately 12 × 16 inches.
Try to keep the thickness even. A dough that is too thin may tear, while dough that is too thick may overpower the filling.
Step 2: Cook the Filling
Heat a large skillet over medium heat.
Add the ground beef or sausage and cook until browned. Break the meat apart with a wooden spoon while cooking.
Once fully cooked, drain excess grease.
Add the diced onion and bell pepper to the pan. Cook for 3 to 4 minutes until the vegetables soften.
Add minced garlic and cook for another 30 seconds until fragrant.
Garlic burns quickly, so avoid cooking it too long.
Step 3: Season the Meat Mixture
Add salt, black pepper, Italian seasoning, and paprika to the cooked filling.
Stir well to distribute the flavors.
Allow the mixture to cool slightly before assembling the bread. A hot filling can make the dough soft and difficult to roll.
Step 4: Prepare the Dough Base
Place the rolled dough rectangle on a piece of parchment paper.
Spread a thin layer of pizza sauce over the dough, leaving about 1 inch of space around the edges.
Leaving space around the border helps seal the bread properly.
Do not add too much sauce because excess moisture can make the bread soggy.
