Step 1: Prepare the Baking Tray

Before making the caramel, prepare your workspace because caramel hardens quickly.

Line a large baking sheet with parchment paper or a silicone baking mat.

Lightly grease the surface with butter or cooking spray to prevent sticking.

Set the tray aside.


Step 2: Combine the Caramel Ingredients

Place the sugar, water, butter, and corn syrup into a heavy-bottom saucepan.

Heat the mixture over medium heat.

Stir gently until the butter melts and the sugar begins dissolving.

Step 3: Cook the Caramel

Stage 3: Hard Crack Stage

Cook until the temperature reaches approximately:

300°F–310°F (149°C–154°C)

At this stage, the caramel will become crisp once cooled.

If you do not have a thermometer, drop a small amount of caramel into cold water. It should immediately form hard, brittle threads that snap easily.


Step 4: Add Flavoring

Remove the saucepan from heat.

Immediately add:

  • Vanilla extract
  • Baking soda

Be careful because the mixture will foam quickly.

The baking soda creates tiny air bubbles, giving the crackle a lighter, more delicate texture instead of a dense candy.

Stir gently until combined.
