Brown Sugar Pork Chops: A Sweet and Savory Comfort Food Classic

Brown Sugar Pork Chops are a delicious combination of juicy, tender pork coated in a flavorful glaze made from brown sugar, garlic, butter, and warm spices. This dish balances sweetness with savory flavors, creating a caramelized crust on the outside while keeping the pork moist and flavorful inside.

Perfect for busy weeknight dinners, family meals, or special gatherings, these pork chops require simple ingredients but deliver restaurant-quality flavor. The secret is in creating a rich brown sugar glaze that melts into the meat while it cooks, forming a beautiful golden coating.

Why You’ll Love Brown Sugar Pork Chops

  • Easy preparation with everyday ingredients
  • Sweet, buttery, and savory flavor combination
  • Tender and juicy pork with a caramelized coating
  • Ready in less than an hour
  • Pairs perfectly with vegetables, rice, mashed potatoes, or salads

Ingredients

For the Pork Chops

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder

For the Brown Sugar Glaze

  • ½ cup brown sugar (packed)
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chicken broth or water

Optional Garnish

  • Fresh parsley, chopped
  • A sprinkle of cracked black pepper
  • Fresh herbs such as thyme or rosemary

Step 1: Prepare the Pork Chops

Remove the pork chops from the refrigerator about 20–30 minutes before cooking.

Allowing them to come closer to room temperature helps them cook more evenly.

Pat the pork chops dry with paper towels. Removing excess moisture helps create a beautiful golden crust when seared.

Step 2: Season the Meat

In a small bowl, combine:

  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Onion powder

Rub the seasoning mixture evenly over both sides of each pork chop.

Make sure the seasoning covers the edges as well because every part of the meat should be flavorful.

Step 3: Sear the Pork Chops

Heat olive oil in a large oven-safe skillet over medium-high heat.

Once the pan is hot, place the pork chops in the skillet.

Sear for about:

  • 3–4 minutes on the first side
  • 2–3 minutes on the second side

The goal is not to cook them completely yet but to create a golden-brown crust that locks in flavor.

Remove the pork chops from the skillet and set them aside.
