Ingredients

  • 2 tablespoons tomato paste
  • 400 g crushed tomatoes

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • A pinch of sugar (optional, to balance acidity)

For the Stellini Pasta

  • 400 g stellini pasta
  • Water for boiling
  • Salt for cooking water

For the Béchamel Sauce

  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 3 cups milk, warmed
  • ¼ teaspoon nutmeg
  • Salt and white pepper, to taste

For Assembly

  • 1–2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Step-by-Step Method

Step 1: Prepare the Meat Sauce

Begin by making the flavorful meat sauce, as it needs time for the ingredients to blend together.

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the chopped onion, carrot, and celery. Cook for about 5–7 minutes until the vegetables soften and become fragrant.
  3. Add the minced garlic and cook for another 30 seconds, being careful not to burn it.
  4. Add the ground meat and break it apart with a wooden spoon. Cook until browned and no longer pink.
  5. Stir in the tomato paste and cook for 1–2 minutes. This helps deepen the tomato flavor.
  6. Add crushed tomatoes and red wine or broth if using.
  7. Season with oregano, basil, salt, and pepper.
  8. Reduce the heat and allow the sauce to simmer gently for 30–45 minutes, stirring occasionally.

A longer simmer creates a richer sauce because the meat releases its flavor into the tomatoes while the vegetables add natural sweetness.


Step 2: Cook the Stellini Pasta

Because the pasta will continue cooking in the oven, it should be slightly undercooked during boiling.

  1. Bring a large pot of salted water to a boil.
  2. Add the stellini pasta and cook according to the package instructions, reducing the cooking time by 1–2 minutes.
  3. Drain the pasta well.
  4. Set it aside while preparing the sauces.

Avoid overcooking stellini because the tiny pasta pieces can become too soft after baking.


Step 3: Make the Creamy Béchamel Sauce

Béchamel provides the smooth, creamy layer that balances the richness of the meat sauce.

  1. Melt butter in a saucepan over medium heat.
  2. Add flour and whisk continuously for about 1–2 minutes to create a smooth roux.
  3. Slowly pour in the warm milk while whisking constantly to prevent lumps.
  4. Continue cooking until the sauce thickens enough to coat the back of a spoon.
  5. Add nutmeg, salt, and white pepper.
  6. Remove from heat and set aside.

The key to a perfect béchamel is adding the milk gradually while constantly stirring. This creates a silky texture without lumps.
