For the Crust:

  • 1 ½ cups crushed graham crackers or digestive biscuits
  • ¼ cup melted butter
  • 2 tablespoons sugar

For the Cream Cheese Lemonade Filling:

  • 225 g (8 oz) cream cheese, softened at room temperature
  • 1 can (about 395 g) sweetened condensed milk
  • ½ cup frozen lemonade concentrate, thawed
  • 1 teaspoon lemon zest (optional, for extra freshness)
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream or whipped topping

For Decoration (Optional):

  • Lemon slices
  • Extra whipped cream
  • Grated lemon zest
  • Mint leaves

Step-by-Step Preparation Method

Step 1: Prepare the Pie Crust

Begin by preparing the base of the pie.

Place the graham crackers or digestive biscuits into a food processor and crush them into fine crumbs. If you do not have a food processor, put the biscuits into a sealed bag and crush them using a rolling pin.

Transfer the crumbs into a bowl and add sugar. Mix well to distribute the sweetness evenly.

Pour in the melted butter and stir until the mixture resembles wet sand. The butter helps bind the crumbs together and creates a firm crust after chilling.

Press the mixture firmly into the bottom and sides of a 9-inch pie dish. Use the back of a spoon or the bottom of a glass to create an even surface.

Place the crust in the refrigerator for at least 20–30 minutes to allow it to become firm.


Step 2: Prepare the Cream Cheese Mixture

Make sure the cream cheese is softened before mixing. Cold cream cheese can create lumps and prevent a smooth filling.

Place the softened cream cheese into a large mixing bowl. Beat it using an electric mixer until it becomes smooth and creamy.

Slowly add the sweetened condensed milk while continuing to mix. The condensed milk provides sweetness and gives the pie its rich, silky texture.

Continue beating until the mixture becomes completely smooth with no visible cream cheese lumps.


Step 3: Add the Lemon Flavor

Add the thawed lemonade concentrate to the cream cheese mixture.

The lemonade concentrate is the key ingredient that gives this pie its signature citrus flavor. It adds acidity, which balances the sweetness of the condensed milk and creates a refreshing taste.

Add vanilla extract and lemon zest if using. Mix again until all ingredients are fully combined.

At this stage, the filling should be creamy, thick, and slightly tangy.
