Step 3: Shape and Pre-Bake the Crust

Remove the dough from the refrigerator and let it sit for a few minutes until it becomes easier to roll.

Roll the dough on a lightly floured surface until it is large enough to cover a 23 cm pie dish.

Carefully transfer the dough into the pie dish. Press it gently into the corners and trim any excess dough around the edges.

Pierce the bottom of the crust several times with a fork. This prevents air pockets from forming during baking.

Cover the dough with parchment paper and add pie weights, dried beans, or rice.

Bake in a preheated oven at:

180°C (350°F) for 15 minutes

Remove the weights and bake for another:

5 minutes

The crust should become slightly golden but not fully browned because it will continue baking with the filling.

Step 4: Prepare the Creamy Walnut Filling

In a saucepan, combine the milk and heavy cream. Warm the mixture over medium heat until it becomes hot but does not boil.

In a separate bowl, whisk together:

  • Eggs
  • Brown sugar
  • White sugar
  • Cornstarch
  • Salt
  • Vanilla extract

Slowly pour the warm cream mixture into the egg mixture while whisking continuously.

This process, called tempering, prevents the eggs from scrambling by gradually increasing their temperature.

Return the mixture to the saucepan and cook over low heat while stirring constantly.

After several minutes, the filling will begin to thicken into a smooth custard.

Remove from heat and allow it to cool slightly.

Step 5: Combine the Walnuts and Filling

Add the toasted walnuts into the warm cream filling.

Mix gently until the walnuts are evenly distributed.

The walnuts should not completely disappear into the cream; they should remain visible and provide texture throughout the pie.

Step 6: Fill and Bake the Pie

Pour the walnut cream mixture into the pre-baked crust.

Smooth the surface with a spatula.

Place the pie into a preheated oven at:

170°C (340°F)

Bake for approximately:

35–45 minutes

The center should look slightly set but still have a gentle wobble. If it becomes completely firm during baking, the filling may become too dense after cooling.

Step 7: Cooling and Setting

Remove the pie from the oven and allow it to cool at room temperature for about 1 hour.

Then refrigerate it for at least:

3–4 hours

Cooling allows the custard filling to fully set and develop a richer texture.

A properly chilled Walnut Cream Pie should have a creamy consistency that holds its shape when sliced.

Serving Suggestions

Walnut Cream Pie can be served in several ways:

  • With lightly sweetened whipped cream for extra softness
  • With a drizzle of caramel sauce for a richer dessert
  • With fresh berries to add a refreshing contrast
  • With a cup of coffee or black tea to balance the sweetness

For the best flavor, remove the pie from the refrigerator about 10–15 minutes before serving. This allows the cream filling to soften slightly while maintaining its structure.

Tips for Making the Perfect Walnut Cream Pie

1. Always Toast the Walnuts

Toasting creates a much deeper walnut flavor and prevents the pie from tasting flat.

2. Keep the Butter Cold

Cold butter is the foundation of a flaky crust. Warm butter creates a dense and greasy pastry.

3. Do Not Overcook the Filling

Cream-based fillings continue to firm as they cool. Removing the pie while the center still has a slight movement gives the best texture.

4. Balance the Sweetness

Walnuts have a naturally rich, slightly bitter flavor. Brown sugar works especially well because its molasses notes complement the nuts.

5. Allow Enough Chilling Time

A rushed pie may appear finished but will not have the smooth, elegant texture that makes this dessert special.

The Character of Walnut Cream Pie

Walnut Cream Pie is a dessert built around contrast: crunchy walnuts against silky cream, a buttery crust against a soft filling, and deep nutty flavors balanced by gentle sweetness. It represents a style of baking where simple ingredients are transformed through careful technique.

When prepared properly, this pie is not merely a sweet dish—it becomes a refined dessert experience with warmth, richness, and a memorable homemade character.
