What Is Cowboy Soup?

Cowboy Soup is a thick and hearty soup that combines ground beef, beans, vegetables, tomatoes, and seasonings into one comforting dish. It is similar to a combination of vegetable soup and chili, but with a lighter broth and a wider variety of vegetables.

Traditionally, cowboy-style meals focused on ingredients that were easy to store, affordable, and filling. Beans provided protein, vegetables added nutrition, and meat brought richness and flavor. Over time, families created their own versions of Cowboy Soup by adding different ingredients based on what they had available.

Today, Cowboy Soup remains popular because it is:

Step-by-Step Instructions

Step 1: Prepare the Ingredients

Begin by preparing all your ingredients before cooking.

Peel and dice the potatoes into small, even cubes. Slice the carrots, chop the celery, dice the onion, and mince the garlic.

Preparing the vegetables ahead of time makes the cooking process easier and helps ensure everything cooks evenly.

Step 2: Brown the Ground Beef

Place a large soup pot or Dutch oven over medium heat.

Add the ground beef and cook for about 7–10 minutes, breaking it apart with a spoon as it cooks.

Continue cooking until the meat is completely browned.

If there is excess grease in the pot, carefully drain it before continuing.

Browning the beef is an important step because it develops a deeper, richer flavor that becomes the foundation of the soup.

Step 3: Sauté the Onion and Garlic

Add the diced onion to the cooked beef.

Cook for approximately 3–4 minutes until the onion becomes soft and slightly translucent.

Add the minced garlic and stir for about 30 seconds until fragrant.

Be careful not to burn the garlic, as it can create a bitter flavor.

Step 4: Add the Vegetables

Add the diced potatoes, carrots, celery, and bell pepper if using.

Stir everything together so the vegetables are coated with the flavorful beef mixture.

Allow them to cook for about 5 minutes. This short cooking time helps the vegetables begin releasing their flavors before adding the liquid.

Step 5: Add the Beans, Tomatoes, and Broth

Add the following ingredients to the pot:

  • Diced tomatoes
  • Tomato sauce
  • Kidney beans
  • Pinto beans
  • Corn
  • Beef broth

Stir well until everything is combined.

The broth should cover most of the ingredients. If the soup appears too thick, add a little extra broth or water.
