Cheesy stuffed meatloaf bites are a fun and modern twist on the classic homemade meatloaf. Instead of preparing one large loaf, this recipe transforms the traditional comfort dish into small, flavorful portions filled with melted cheese. The secret to making them delicious is creating a moist meat mixture, sealing the cheese inside properly, and baking them until the outside develops a rich caramelized finish.

Ingredients Needed

For the Meatloaf Mixture:

  • 1 ½ pounds ground beef (preferably 80/20 for a juicy texture)
  • ½ cup breadcrumbs
  • 1 large egg
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • ¼ cup milk
  • 2 tablespoons ketchup

For the Glaze:

  • ⅓ cup ketchup
  • 2 tablespoons barbecue sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard

Step 1: Prepare the Meatloaf Mixture

Begin by preparing the base of the meatloaf bites. Place the ground beef in a large mixing bowl and add breadcrumbs, egg, milk, chopped onion, garlic, ketchup, Worcestershire sauce, salt, pepper, Italian seasoning, and smoked paprika.

Mix the ingredients gently using your hands or a spoon until everything is evenly combined. Avoid overmixing because it can make the meatloaf bites dense and tough. The goal is to create a mixture that is soft, moist, and easy to shape.

Allowing the mixture to rest for about 10 minutes before shaping can help the breadcrumbs absorb moisture and improve the final texture.

Step 2: Prepare the Cheese Filling

While the meat mixture rests, prepare the cheese center. Cut cheese into small cubes or prepare small portions of shredded cheese.
