Monterey Sausage Pie: A Hearty Savory Classic with a Step-by-Step Recipe

Monterey Sausage Pie is a comforting savory dish that combines the rich flavors of seasoned sausage, creamy cheese, aromatic vegetables, and a golden pastry crust. Inspired by the warm, homestyle cooking traditions of the American West, this pie is known for its satisfying texture and bold flavor. It is an excellent choice for family dinners, weekend gatherings, brunches, or any occasion where you want to serve something filling and flavorful.

The name “Monterey” is often associated with the coastal California region and the use of ingredients that reflect a relaxed, rustic style of cooking. While recipes can vary, Monterey Sausage Pie typically highlights simple ingredients transformed into a delicious meal: savory sausage cooked with onions and peppers, a rich egg-based filling, melted cheese, and a flaky crust that holds everything together.

This dish is especially appealing because it can be prepared ahead of time, reheated easily, and adapted with different cheeses, vegetables, or seasonings depending on personal preference.

Ingredients

For the crust:

  • 1 prepared pie crust (homemade or store-bought), enough for a 9-inch pie dish
  • 1 tablespoon butter or oil for greasing the dish (if needed)

For the filling:

  • 1 pound (450 g) sausage meat, mild or spicy depending on preference
  • 1 medium onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese (optional for extra flavor)
  • 4 large eggs
  • 1 cup milk or cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon dried oregano or Italian seasoning
  • Fresh parsley or green onions for garnish (optional)

Step-by-Step Method

Step 1: Prepare the Pie Dish and Oven

Begin by preheating the oven to 375°F (190°C). Lightly grease a 9-inch pie dish if necessary, then place the prepared crust inside. Press it gently into the corners and edges of the dish.

Trim any excess dough around the edges and create a decorative edge by pressing the dough with your fingers or using a fork.

Set the crust aside while preparing the filling.

Step 2: Cook the Sausage

Place a large skillet over medium heat. Add the sausage meat and cook until it begins to brown, breaking it apart with a wooden spoon as it cooks.

Continue cooking until the sausage is fully browned and no longer pink. This usually takes about 7–10 minutes.

If there is excess grease in the pan, carefully drain it, leaving enough flavorful fat to cook the vegetables.

Step 3: Add the Vegetables and Seasonings

Add the chopped onion and bell pepper to the cooked sausage. Cook for about 4–5 minutes until the vegetables become softer and the onion turns slightly translucent.

Add the minced garlic and cook for another 30 seconds to 1 minute until fragrant.

Season the mixture with paprika, oregano, salt, and black pepper. Stir well so the flavors combine evenly.

Remove the skillet from the heat and allow the sausage mixture to cool slightly.
