Step 1: Prepare the Potatoes

Begin by washing and peeling the potatoes if you prefer a smoother texture. Yukon Gold potatoes are an excellent choice because they are naturally creamy and hold their shape well during slow cooking.

Slice the potatoes into thin, even rounds, about ⅛ inch thick. Keeping the slices similar in size is important because it allows every layer to cook at the same rate. If the slices are too thick, the potatoes may take longer to become tender.
