
German Lebkuchen Bars: A Traditional Christmas Treat with a Soft, Spiced Heart
German Lebkuchen Bars are a wonderful variation of traditional Lebkuchen, the famous German spiced Christmas cookie. Instead of shaping individual cookies, the fragrant batter is spread into a single pan, baked until tender, and cut into neat bars. The result is soft, chewy, warmly spiced, and deeply aromatic, with flavors of honey, citrus, almonds, and classic German winter spices.
These bars are especially enjoyable because their flavor improves after resting. The spices become more pronounced, while the texture develops that characteristic soft, almost cake-like Lebkuchen consistency.
Ingredients
For the Lebkuchen bars:
- ½ cup (120 g) honey
- ½ cup (100 g) brown sugar
- ¼ cup (60 g) unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon finely grated orange zest
- 1 tablespoon finely grated lemon zest
- 1½ cups (150 g) finely ground almonds
- 1¾ cups (220 g) all-purpose flour
- 1 teaspoon baking powder
- 1½ teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cardamom
- ¼ teaspoon salt
- ½ cup (80 g) finely chopped candied orange or citron
- 2 tablespoons milk, if needed
For the simple glaze:
- 1 cup (120 g) powdered sugar
- 2–3 tablespoons lemon or orange juice
Optional decoration:
- Sliced almonds
- Candied orange peel
- A small amount of melted dark chocolate
Step 1: Prepare the Baking Pan
Begin by preheating your oven to 350°F (175°C).
Line an approximately 9 × 13-inch (23 × 33 cm) baking pan with parchment paper, leaving a little paper hanging over the sides. This will make it much easier to remove the baked Lebkuchen later.
Lightly grease the parchment if desired.
Step 2: Warm the Honey, Sugar, and Butter
Place the honey, brown sugar, and butter in a small saucepan.
Warm the mixture over low heat, stirring occasionally until the butter has completely melted and the sugar has begun to dissolve.
Do not let the mixture boil. The goal is simply to create a smooth, warm mixture.
Remove the saucepan from the heat and allow it to cool for several minutes. It should be warm rather than hot before the eggs are added.
Step 3: Add the Eggs and Flavorings
Transfer the slightly cooled honey mixture to a large mixing bowl.
Add:
- the eggs
- vanilla extract
- orange zest
- lemon zest
Whisk everything together until smooth.
The citrus zest is particularly important because it gives the bars a bright flavor that balances the sweetness of the honey and brown sugar.
Step 4: Mix the Dry Ingredients
In a separate bowl, combine the:
- flour
- ground almonds
- baking powder
- cinnamon
- ginger
- cloves
- nutmeg
- cardamom
- salt
Stir thoroughly so that the spices and baking powder are evenly distributed throughout the flour.
The combination of cinnamon, cloves, cardamom, ginger, and nutmeg gives Lebkuchen its unmistakable warm, festive character.
