Bacon Pea Salad: A Creamy, Crunchy Classic for Any Occasion

Bacon Pea Salad is one of those easy side dishes that manages to feel both comforting and refreshing. Sweet green peas, crisp bacon, sharp cheese, and a creamy dressing come together in a colorful salad that requires very little cooking. It is especially convenient for potlucks, barbecues, family dinners, picnics, and holiday gatherings because it can be prepared ahead of time and served chilled.

What makes this salad stand out is the contrast of textures and flavors. The peas are tender and slightly sweet, the bacon brings a savory crunch, the cheese adds richness, and the creamy dressing ties everything together with a lightly tangy finish.

Why You’ll Love This Bacon Pea Salad

This recipe is simple enough for a beginner but flavorful enough to earn a place on a party table. It also uses familiar ingredients that are easy to customize.

  • Quick and straightforward: Most of the preparation involves chopping and mixing.
  • Make-ahead friendly: The salad benefits from resting in the refrigerator before serving.
  • A great texture combination: Tender peas, crisp bacon, creamy dressing, and crunchy vegetables create plenty of contrast.
  • Easy to customize: You can adjust the cheese, vegetables, or dressing to suit your taste.
  • Perfect for gatherings: It travels well when kept properly chilled and makes an excellent side dish.

Ingredients You’ll Need

For the salad:

  • 4 cups frozen green peas, thawed
  • 6 slices bacon, cooked until crisp and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely diced red onion
  • 1/2 cup diced celery
  • 2 hard-boiled eggs, chopped
  • 2 tablespoons chopped fresh parsley, optional
  • Salt and freshly ground black pepper, to taste

For the creamy dressing:

  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or sugar
  • 1/4 teaspoon garlic powder
  • A small pinch of salt
  • Freshly ground black pepper, to taste

Step 1: Thaw the Peas

Place the frozen peas in a colander and allow them to thaw completely. For a quicker method, rinse them briefly under cool water and let them drain thoroughly.

There is no need to cook the peas until soft. The goal is to keep them tender while preserving their fresh color and slight bite.

Once thawed, gently pat them dry with paper towels. Removing excess moisture is important because watery peas can thin the dressing and make the finished salad less creamy.

Step 2: Cook and Prepare the Bacon

Cook the bacon until it is crisp and browned. Transfer it to a paper towel-lined plate to remove excess grease and allow it to cool.

Once cool enough to handle, crumble or chop the bacon into small pieces.

For the best texture, keep the bacon fairly crisp. Softer bacon can lose some of its appeal after it is mixed with the creamy dressing.

Step 3: Prepare the Fresh Ingredients

While the peas and bacon are cooling, prepare the remaining ingredients.

Finely dice the red onion and celery so that their flavors are distributed throughout the salad instead of appearing in large pieces. Chop the hard-boiled eggs and shred the cheddar cheese if it is not already shredded.

Place the peas, bacon, cheese, onion, celery, and eggs in a large mixing bowl.

If you’re using parsley, reserve a little for garnishing the finished salad.

Step 4: Make the Creamy Dressing

In a separate small bowl, combine the mayonnaise and sour cream.

Add the apple cider vinegar, Dijon mustard, honey or sugar, garlic powder, salt, and black pepper. Whisk until the mixture is smooth and evenly combined.

Taste the dressing before adding it to the salad. If you prefer more tang, add a tiny splash of vinegar. If you like a slightly sweeter dressing, add a small amount of additional honey or sugar.

The dressing should taste flavorful on its own because the peas and other ingredients will slightly mellow its intensity.
