Creamy Garlic Shrimp Alfredo: A Rich, Comforting Pasta Dinner

Few pasta dishes are as satisfying as a bowl of Creamy Garlic Shrimp Alfredo. Tender shrimp, silky Alfredo sauce, fragrant garlic, and perfectly cooked pasta come together in a dish that feels restaurant-worthy while remaining surprisingly simple to prepare at home.

The secret to a great shrimp Alfredo isn’t simply adding cream and cheese. It’s about building layers of flavor: seasoning the shrimp properly, gently cooking the garlic, creating a smooth sauce, and using pasta water to help the sauce cling beautifully to every strand of pasta.

What Makes This Shrimp Alfredo Special?

This recipe combines several textures and flavors in one comforting dish. The shrimp are lightly seasoned and sautéed until juicy, while the sauce is creamy without being overly complicated. Fresh garlic gives the dish its distinctive aroma, and Parmesan cheese adds a salty, nutty richness.

Fettuccine is the classic choice because its broad shape holds onto the creamy sauce, but you can easily substitute linguine, spaghetti, or another pasta you have available.


Ingredients

For approximately 4 servings, you’ll need:

For the pasta

  • 12 ounces fettuccine
  • Salt, for the pasta water
  • ½ cup reserved pasta water

For the shrimp

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 2–3 cloves garlic, finely minced

For the Alfredo sauce

  • 2 tablespoons butter
  • 3–4 cloves garlic, minced
  • 1½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste
  • A small pinch of Italian seasoning
  • 2 tablespoons chopped fresh parsley

Optional additions

  • Red pepper flakes for a little heat
  • Fresh lemon juice for brightness
  • Extra Parmesan for serving
  • A small amount of freshly grated mozzarella for an even richer sauce

Step-by-Step Method

1. Prepare the Shrimp

Start by preparing the shrimp. If you’re using frozen shrimp, thaw them completely and pat them dry with paper towels.

Removing excess moisture is important because wet shrimp tend to steam rather than develop a nice golden exterior.

Place the shrimp in a bowl and season them with paprika, Italian seasoning, black pepper, and salt. Toss gently until every shrimp is evenly coated.

Don’t over-season at this stage because the Parmesan in the Alfredo sauce will contribute additional saltiness later.


2. Cook the Pasta

Bring a large pot of water to a boil and generously salt it.

Add the fettuccine and cook according to the package directions until al dente. The pasta should be tender but still have a slight firmness when bitten.

Before draining, carefully reserve about ½ cup of the pasta water.

This small step makes a big difference. The starchy water can loosen the Alfredo sauce while helping it emulsify and adhere to the pasta.

Drain the pasta and set it aside. Avoid rinsing it because the surface starch helps the sauce cling to the noodles.


3. Sauté the Shrimp

While the pasta cooks, heat a large skillet over medium-high heat.

Add the olive oil and butter. Once the butter has melted, place the seasoned shrimp into the pan in a single layer.

Cook for approximately 1–2 minutes per side, depending on their size.

The shrimp should become opaque and lightly golden. Once cooked, transfer them to a clean plate.

Try not to overcook the shrimp. They continue cooking slightly from residual heat, and overcooked shrimp can quickly become firm and rubbery.


4. Build the Garlic Base

Reduce the heat to medium and add the remaining butter to the same skillet.

Once melted, add the minced garlic.

Cook for about 30–60 seconds, stirring constantly.

The goal is to release the garlic’s aroma without browning it too aggressively. Burnt garlic can introduce a bitter flavor that overwhelms the creamy sauce.

If you’re using red pepper flakes, add a small pinch at this stage.
