Puff Pastry Sausage Rolls: Crispy, Golden, and Delicious
Few snacks are as comforting and crowd-pleasing as homemade puff pastry sausage rolls. With a crisp, flaky pastry exterior wrapped around a juicy, well-seasoned sausage filling, they make an excellent breakfast, lunchbox treat, party appetizer, or casual snack. They look impressive when freshly baked, yet the preparation is surprisingly simple.
The secret is to keep the pastry cold, season the sausage mixture generously, and bake the rolls until the pastry is deeply golden and beautifully puffed.
Why You’ll Love These Puff Pastry Sausage Rolls
This recipe is designed to be straightforward while still producing bakery-style results. The combination of buttery puff pastry and savory sausage creates a satisfying contrast between the crisp outside and tender filling.
They are also incredibly versatile. You can prepare them in advance, adjust the seasonings to your taste, make them bite-sized for parties, or serve them as larger rolls alongside a fresh salad or vegetables.
Ingredients
For the Sausage Filling
- 1 pound (450 g) pork sausage meat
- 1 small onion, finely chopped
- 1 garlic clove, finely minced
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon dried sage
- ½ teaspoon dried thyme
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
- ½ teaspoon salt, or to taste
- 1 teaspoon Dijon mustard
- 2 tablespoons breadcrumbs
For the Pastry
- 1 sheet puff pastry, thawed according to package directions
- 1 egg
- 1 tablespoon milk or water
- Sesame seeds or poppy seeds, optional
Tip: If your sausage meat is already heavily seasoned, reduce the added salt and taste the mixture before forming the rolls.
How to Make Puff Pastry Sausage Rolls
Step 1: Prepare the Sausage Mixture
Begin by placing the sausage meat in a large mixing bowl. Add the finely chopped onion, minced garlic, parsley, sage, thyme, smoked paprika, black pepper, salt, Dijon mustard, and breadcrumbs.
Using clean hands or a wooden spoon, mix everything together until the seasonings and vegetables are evenly distributed.
Try not to overwork the mixture. Mixing just until combined helps keep the filling tender rather than dense.
A useful tip
Finely chop the onion rather than leaving large pieces. Small pieces distribute more evenly through the sausage and cook at the same rate as the filling.
Step 2: Prepare the Puff Pastry
Place the thawed puff pastry on a lightly floured work surface.
If the pastry is very thick, gently roll it into a neat rectangle. Avoid rolling it excessively, because you want to preserve the pastry’s layers.
Cut the pastry lengthwise into two equal strips.
The pastry should remain cool and slightly firm. If it becomes soft or sticky while you’re working, place it in the refrigerator for several minutes before continuing.
Step 3: Shape the Sausage Filling
Divide the sausage mixture into two portions.
Take one portion and shape it into a long log roughly the length of one pastry strip. Place the sausage slightly off-center along the pastry.
Repeat with the second portion.
The filling shouldn’t be excessively thick. A moderately sized sausage log allows the meat to cook properly while giving the pastry plenty of room to puff around it.
Step 4: Roll the Pastry Around the Filling
Brush one long edge of the pastry lightly with water.
Starting from the opposite side, carefully fold the pastry over the sausage mixture until the two edges meet.
Press the seam gently to seal it.
Turn the roll so that the seam is facing downward. Repeat with the remaining pastry and sausage mixture.
Don’t wrap the pastry too tightly around the filling. Leaving a little room allows the sausage to expand as it cooks.
