Step-by-Step Method

Step 1: Prepare the Baking Pan

Preheat your oven to 350°F (175°C).

Line an 8-inch square baking pan with parchment paper, leaving some parchment hanging over two sides. These overhanging edges will make it much easier to lift the chilled bars from the pan later.

Lightly grease the parchment and the exposed sides of the pan.


Step 2: Make the Shortbread Crust

In a medium bowl, whisk together the flour, sugar, and salt.

Add the melted butter and vanilla extract. Stir until the mixture comes together into a soft, crumbly dough.

Transfer the mixture to the prepared pan and press it firmly into an even layer.

Take a little extra time with this step. A uniformly packed crust will bake more evenly and give every bar a consistent base.

Bake for approximately 18–22 minutes, or until the edges are lightly golden.

Place the heavy cream, milk, and sugar in a saucepan over medium-low heat.

In a separate large bowl, whisk the egg yolks, vanilla extract, and salt until smooth.

Slowly pour a small amount of the warm cream mixture into the egg yolks while whisking constantly.

Continue adding the warm cream gradually.

This process, called tempering, raises the temperature of the egg yolks slowly and helps prevent them from scrambling.
