  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley, for serving

Optional Thickener

If you prefer a thicker stew:

  • 2 tablespoons cornstarch
  • 3 tablespoons cold water

Step 1: Brown the Ground Beef

Start by heating a large skillet over medium-high heat. Add the ground beef and break it apart with a wooden spoon or spatula.

Cook until the beef is browned and no longer pink, stirring occasionally so that it cooks evenly.

Drain excess grease if necessary. This step may seem optional because the beef will eventually cook in the slow cooker, but browning it first gives the stew a noticeably richer flavor and prevents the finished dish from becoming overly greasy.

Step 2: Add the Onion and Garlic

Return the skillet to medium heat and add the diced onion to the browned beef.

Cook for about 3–4 minutes, just until the onion begins to soften. Add the minced garlic and cook for another 30–60 seconds.

You do not need to completely cook the vegetables at this stage. The goal is simply to release their flavors before they go into the slow cooker.

Step 3: Prepare the Slow Cooker

Place the potatoes, carrots, and celery in the bottom of a 6-quart slow cooker.

Add the browned beef mixture on top.

Then pour in the diced tomatoes and beef broth.

Add the tomato paste, Worcestershire sauce, Italian seasoning, paprika, thyme, salt, and black pepper. Stir gently until everything is distributed throughout the slow cooker.

Finally, place the bay leaf into the mixture.

Step 4: Slow Cook the Stew

Cover the slow cooker with its lid.

Cook on LOW for 7–8 hours or on HIGH for approximately 4 hours, until the potatoes and carrots are tender.

Cooking on LOW is ideal when you have the time because the longer cooking period allows the flavors to blend gradually.

Try not to repeatedly lift the lid while the stew cooks. Each time the lid is removed, heat escapes and the cooking process can take longer.
