Frito Chili Pie Casserole

There is something wonderfully comforting about a meal that combines hearty chili, crunchy corn chips, plenty of melted cheese, and familiar Tex-Mex flavors in one bubbling casserole. Frito Chili Pie Casserole takes the classic Frito chili pie idea and turns it into an easy, family-style baked dish that is perfect for busy weeknights, casual gatherings, game-day meals, or whenever you want something warm and satisfying without spending hours in the kitchen.

Instead of assembling individual servings, everything is layered in one baking dish. The Fritos add a salty crunch, the chili provides a rich and savory center, and the melted cheese brings all the components together. The best part is that you can easily customize the casserole with your favorite toppings.

Why You’ll Love This Frito Chili Pie Casserole

This casserole is especially appealing because it requires very little complicated preparation. You can use homemade chili when you have some available, or reach for your favorite canned chili when you need dinner on the table quickly.

The contrast between the crunchy corn chips and the soft, flavorful chili makes every bite interesting. Meanwhile, the cheese melts into the chili and creates a deliciously creamy, savory topping.

It is also an excellent recipe for customization. You can make it mild or spicy, add beans or vegetables, switch the cheese, or finish it with fresh toppings.

Ingredients

For a casserole that serves approximately 6 people, you will need:

  • 2 cups Fritos corn chips, plus extra for topping
  • 2 pounds prepared chili, homemade or your favorite canned chili
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack or Mexican-blend cheese
  • ½ cup diced onion
  • 1 small can diced green chiles, drained, optional
  • ½ teaspoon chili powder, optional
  • ½ teaspoon ground cumin
  • ¼ teaspoon smoked paprika
  • Salt and black pepper, to taste

Optional Toppings

Once the casserole comes out of the oven, you can add:

  • Sliced green onions
  • Diced tomatoes
  • Chopped cilantro
  • Sour cream
  • Jalapeño slices
  • Diced avocado
  • Extra Fritos
  • Pickled jalapeños
  • A little shredded lettuce

You don’t need every topping. Even a simple combination of extra Fritos, green onions, and sour cream can make the finished dish delicious.

How to Make Frito Chili Pie Casserole Step by Step

Step 1: Prepare the Oven and Baking Dish

Start by preheating your oven to 375°F (190°C).

Lightly grease a 9×13-inch baking dish. A small amount of cooking spray or oil is enough to keep the casserole from sticking around the edges.

Preparing the dish first makes the layering process much easier.

Step 2: Prepare the Chili Mixture

Place your prepared chili in a large bowl or saucepan.

If the chili is very thick, you can loosen it slightly with a small splash of water or broth. You want it thick enough to hold its shape but not so dry that it becomes difficult to spread.

Stir in the cumin, smoked paprika, and chili powder if you’re using them. Taste before adding salt because both the chili and Fritos can already contain quite a bit of seasoning.

If you like a little heat, add the drained green chiles at this stage.

Step 3: Create the First Frito Layer

Spread about 2 cups of Fritos across the bottom of the prepared baking dish.

Try to distribute them relatively evenly so that every serving gets some of that crunchy corn-chip flavor.

Don’t crush the chips too finely. Larger pieces provide a better texture after baking.
