One-Pan Sausage and Potato Bake

When you want a dinner that feels hearty and comforting without spending the whole evening in the kitchen, One-Pan Sausage and Potato Bake is an easy recipe to keep in your rotation. Everything cooks together on a single baking sheet, allowing the potatoes to become tender and golden while the sausage develops deliciously browned edges.

The beauty of this dish is its simplicity. A handful of everyday ingredients, a flavorful seasoning mixture, and one pan are all you need to create a satisfying meal. The roasted vegetables soak up the savory juices from the sausage as they cook, creating plenty of flavor without requiring a complicated sauce.

Why You’ll Love This Recipe

This recipe is especially useful on busy weeknights because most of the work happens before the pan goes into the oven. Once everything is seasoned and arranged, the oven takes care of the rest.

  • One-pan preparation: Less cookware means less cleanup.
  • Simple ingredients: Nothing complicated or difficult to find.
  • Big flavor: Roasting brings out the natural sweetness of the vegetables and gives the sausage beautifully browned edges.
  • Easy to customize: You can switch the vegetables, sausage, and seasonings according to what you have available.
  • Family-friendly: It’s filling, comforting, and easy to serve.

Ingredients

For about 4 servings, you’ll need:

  • 1 pound smoked sausage or kielbasa, sliced into thick rounds
  • 1 ½ pounds baby potatoes, halved or quartered depending on size
  • 1 medium yellow onion, cut into wedges
  • 1 bell pepper, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • 1 tablespoon chopped fresh parsley, for serving
  • Optional: a pinch of red pepper flakes for heat

Step 1: Prepare the Oven and Baking Sheet

Preheat your oven to 425°F (220°C).

Line a large rimmed baking sheet with parchment paper or lightly grease it with cooking spray. A large pan is important because the ingredients should have enough room to spread into a fairly even layer.

If the pan is overcrowded, the potatoes may steam instead of roast, which can prevent them from developing those desirable crisp, golden edges.

Step 2: Prepare the Potatoes

Wash the potatoes thoroughly and cut them into similarly sized pieces.

If you’re using small baby potatoes, simply cutting them in half is usually enough. Larger potatoes should be cut into quarters or smaller chunks.

Try to keep the pieces approximately the same size so that they finish cooking at roughly the same time.

Place the potatoes in a large mixing bowl.

Step 3: Prepare the Sausage and Vegetables

Slice the sausage into rounds about ½-inch thick.

Cut the onion into wedges and the bell pepper into bite-sized pieces. You can also add other vegetables such as zucchini, broccoli, carrots, or green beans if desired.

Add the sausage, onion, and bell pepper to the bowl with the potatoes.
