Freezer Meatball and Potatoes Crockpot Meal

When you need a comforting dinner that practically cooks itself, this Freezer Meatball and Potatoes Crockpot Meal is an easy option to keep in your back pocket. It combines tender meatballs, hearty potatoes, vegetables, and a savory, creamy sauce in one slow cooker. The best part is that much of the meal can be prepared ahead of time and frozen, making it especially useful for busy weeknights.

The slow cooker gently cooks everything together, allowing the potatoes to absorb the flavorful sauce while the meatballs become tender and juicy. Whether you use homemade meatballs or a convenient bag of frozen ones, this is the kind of meal that fills the kitchen with an inviting aroma while requiring very little hands-on work.

Why You’ll Love This Crockpot Meal

This recipe is built around convenience without sacrificing comfort. Frozen meatballs eliminate the need to prepare meat from scratch, while potatoes make the meal hearty enough to serve as a complete dinner.

It’s also flexible. You can use beef, turkey, or chicken meatballs, switch up the vegetables, or adjust the seasoning to suit your family’s preferences. Preparing the ingredients as a freezer meal means you can assemble everything ahead of time and have a satisfying dinner ready with minimal effort.

Ingredients

  • 1½ pounds frozen fully cooked meatballs
  • 1½ pounds baby potatoes, halved
  • 1 small yellow onion, sliced
  • 2 carrots, peeled and cut into chunks
  • 2 cloves garlic, minced
  • 1½ cups beef or chicken broth
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 cup frozen peas, added near the end
  • 2 tablespoons chopped fresh parsley, for serving

Optional Creamy Finish

For an even richer sauce, stir in one of the following near the end:

  • ½ cup sour cream
  • ½ cup heavy cream
  • 2–3 ounces softened cream cheese

Step 1: Prepare the Potatoes and Vegetables

Wash the baby potatoes thoroughly and cut larger ones in half so that the pieces are relatively similar in size. Keeping the pieces uniform helps them cook at approximately the same rate.

Slice the onion and cut the carrots into bite-sized chunks. Mince the garlic.

If you are preparing this as a freezer meal, allow the vegetables to dry thoroughly before packing them. Excess moisture can contribute to freezer crystals and affect the texture.

Step 2: Make the Sauce

In a bowl, whisk together the broth, condensed cream of mushroom soup, Worcestershire sauce, Italian seasoning, paprika, garlic powder, and onion powder.

Taste the mixture before adding much salt because the soup, broth, and meatballs can already contain a fair amount of sodium. Add a little black pepper for extra flavor.

The sauce should be smooth and well combined.
