Cherry-Topped Creamy Rice Pudding
There is something wonderfully comforting about a bowl of homemade rice pudding. Soft, tender grains of rice simmered slowly in sweet, creamy milk create a dessert that feels both nostalgic and satisfying. Add a glossy layer of cherries on top, and the humble pudding becomes an especially inviting treat with a beautiful contrast of colors, textures, and flavors.
This Cherry-Topped Creamy Rice Pudding combines a rich, silky pudding with bright, slightly tangy cherries. The rice absorbs the milk as it cooks, creating a naturally thick and creamy consistency without requiring complicated techniques. It is delicious served warm, but chilling it gives the pudding an even firmer, creamier texture.
Why You’ll Love This Rice Pudding
This dessert is simple enough for a weekday treat but attractive enough to serve after a family dinner. The ingredients are inexpensive, the preparation is straightforward, and most of the cooking happens in one saucepan.
The cherries are particularly important because they balance the sweetness of the pudding. Their fruity flavor cuts through the richness of the milk, while their vibrant color makes every serving look special.
You can use fresh, frozen, or canned cherries depending on what you have available. A quick cherry topping made with a little sugar and lemon juice gives the fruit a glossy finish and creates a spoonable sauce that drips beautifully over the creamy pudding.
Ingredients
For the Rice Pudding
- 1 cup uncooked short- or medium-grain white rice
- 2 cups water
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg, optional
- 2 tablespoons unsalted butter
- 1/2 cup heavy cream
For the Cherry Topping
- 2 cups pitted cherries, fresh or frozen
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon cold water
Optional Garnishes
- Fresh cherries
- A light dusting of cinnamon
- Whipped cream
- Toasted sliced almonds
- A few small mint leaves
Step 1: Prepare the Rice
Begin by rinsing the rice under cool running water. Rinse it several times until the water becomes noticeably clearer. This removes excess surface starch and helps you control the final texture of the pudding.
Place the rinsed rice and 2 cups of water in a medium saucepan. Bring the mixture to a gentle boil over medium-high heat.
Once boiling, reduce the heat, cover the saucepan, and simmer for approximately 12–15 minutes, or until most of the water has been absorbed and the rice is tender.
Avoid cooking the rice until it becomes completely dry. A small amount of moisture remaining in the saucepan is perfectly fine.
Step 2: Add the Milk and Sugar
Once the rice is tender, pour in the whole milk. Add the sugar, salt, cinnamon, and nutmeg if using.
Stir everything together and reduce the heat to low.
This is where patience makes a difference. Rice pudding becomes creamy because the rice gradually releases starch while absorbing the milk. Cooking it too quickly can cause the milk to scorch or the rice to stick to the bottom of the pan.
Allow the mixture to simmer gently for about 25–30 minutes. Stir frequently, especially around the bottom and corners of the saucepan.
As it cooks, the pudding will gradually become thicker and creamier.
