Chocolate Chip Coconut Macaroons
Chocolate Chip Coconut Macaroons are the kind of cookie that feels both simple and indulgent. They combine sweet, chewy coconut with little pockets of chocolate, creating a dessert with a lightly crisp outside and a soft, moist center. Best of all, they require only a handful of ingredients and come together without complicated techniques.
These macaroons are perfect for holiday cookie trays, afternoon treats, bake sales, or whenever you want something sweet without spending hours in the kitchen.
Why You’ll Love These Macaroons
The appeal of these cookies comes from their texture. Shredded coconut gives them a naturally chewy bite, while the chocolate chips add richness and a little contrast to the coconut’s sweetness. The outside develops a beautiful golden color in the oven while the center stays tender.
They are also wonderfully forgiving. You don’t need to roll out dough, chill it for hours, or decorate the finished cookies. Just mix, scoop, bake, and let them cool.
Ingredients
For about 18–24 macaroons, depending on size, you’ll need:
- 3 cups sweetened shredded coconut
- 1 cup semi-sweet chocolate chips
- ⅔ cup sweetened condensed milk
- 2 large egg whites
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Optional:
- ½ cup melted chocolate for drizzling or dipping
- A small pinch of flaky sea salt for finishing
Step 1: Prepare the Oven and Baking Sheet
Start by preheating your oven to 325°F (165°C).
Line a baking sheet with parchment paper. This is important because the condensed milk and coconut can become sticky as the cookies bake. Parchment makes the macaroons much easier to remove once they have cooled.
Step 2: Whisk the Egg Whites
Place the egg whites in a clean mixing bowl and whisk until they become lightly foamy.
You don’t need to whip them into stiff peaks. The goal is simply to break them up and create a little volume.
Add the vanilla extract and salt, then gently whisk again.
Step 3: Combine the Coconut and Chocolate
In a separate large bowl, add the shredded coconut and chocolate chips.
Toss them together so the chocolate chips are evenly distributed throughout the coconut. Doing this before adding the wet ingredients helps prevent the chocolate from clumping together in one part of the mixture.
