Potato Mac Salad: A Creamy, Comforting Side Dish

Potato Mac Salad is the kind of side dish that brings together two classic favorites—creamy potato salad and comforting macaroni salad—in one satisfying bowl. Tender potatoes and soft macaroni are combined with a rich, tangy dressing, crunchy vegetables, and simple seasonings to create a dish that is creamy, flavorful, and incredibly easy to prepare.

It is especially delicious served chilled alongside grilled meats, sandwiches, burgers, or a casual family dinner. Because it can be prepared ahead of time, Potato Mac Salad is also a convenient choice for picnics, potlucks, and gatherings.

Why You’ll Love This Potato Mac Salad

The appeal of this salad comes from its combination of textures. The potatoes provide a soft, hearty bite, while the macaroni makes the salad pleasantly chewy. Crisp vegetables add freshness and crunch, and the creamy dressing ties everything together.

Another advantage is how flexible the recipe can be. You can adjust the sweetness, tanginess, creaminess, and vegetables according to your preferences without changing the basic preparation.

Ingredients

For the Salad

  • 3 medium potatoes, peeled and cut into small cubes
  • 2 cups elbow macaroni
  • 2 large eggs
  • 1/2 cup finely diced carrot
  • 1/3 cup finely diced celery
  • 1/4 cup finely diced onion
  • 1/3 cup sweet pickle relish
  • 2 tablespoons chopped fresh parsley, optional

For the Creamy Dressing

  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2–3 tablespoons milk, as needed

The milk is optional, but adding a small amount can loosen the dressing if it becomes too thick.

Step-by-Step Method

1. Prepare the Potatoes

Start by peeling the potatoes and cutting them into evenly sized cubes. Keeping the pieces relatively uniform helps them cook at the same rate.

Place the potatoes in a large saucepan and cover them with cold water. Add a small pinch of salt and bring the water to a gentle boil.

Cook the potatoes until they are fork-tender but still hold their shape. This usually takes around 8–12 minutes, depending on the size of the cubes.

Avoid overcooking them. Potatoes that become too soft can break apart when mixed into the salad.

Drain the potatoes thoroughly and allow them to cool.

2. Cook the Macaroni

While the potatoes are cooking, bring another pot of salted water to a boil.

Add the elbow macaroni and cook according to the package directions until tender.

Once cooked, drain the pasta and rinse it briefly under cool water. This stops the cooking process and helps cool the macaroni for the salad.

Set it aside to drain completely.

3. Prepare the Eggs

Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat and cook the eggs until they are hard-boiled.

Transfer the cooked eggs to cold water and let them cool completely.

Peel the eggs and chop them into small pieces.
