Ingredients
For the Beef
- 1 pound beef sirloin, flank steak, or another tender beef cut
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon minced garlic
- 1 teaspoon grated fresh ginger
For the Stir-Fry
- 2 tablespoons neutral cooking oil, divided
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow or orange bell pepper, thinly sliced
- 1 medium yellow onion, sliced
- 2 green onions, sliced
- 1 teaspoon sesame seeds, optional
For the Sauce
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon cornstarch
- 2 tablespoons water
- 1/4 teaspoon crushed red pepper flakes, optional
Step 1: Slice the Beef Thinly
Start by preparing the beef. For the most tender result, slice the steak thinly against the grain.
Cutting against the grain shortens the muscle fibers, which helps the beef feel more tender when you bite into it. If the meat is difficult to slice thinly, place it in the freezer for about 15–20 minutes first. It will firm up slightly and become easier to cut.
Try to keep the pieces similar in size so they cook evenly.
Step 2: Marinate the Beef
Place the sliced beef in a bowl and add the soy sauce, cornstarch, sesame oil, black pepper, garlic, and ginger.
Toss everything together until the beef is evenly coated.
Let it sit for about 10–15 minutes while you prepare the vegetables and sauce.
The cornstarch is especially useful because it helps create a lightly coated surface on the beef, allowing it to brown nicely while helping retain moisture.
Step 3: Prepare the Stir-Fry Sauce
In a small bowl, combine the soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, cornstarch, water, and red pepper flakes if using.
Whisk until the cornstarch is fully dissolved.
Set the sauce aside.
Preparing the sauce before cooking is important because stir-frying moves quickly. Once the pan is hot, you will want all of your ingredients within easy reach.
