Toasted Coconut Macaroons: Golden, Chewy, and Irresistibly Coconutty

There is something wonderfully comforting about a freshly baked coconut macaroon. These Toasted Coconut Macaroons take that classic treat a step further by bringing out the natural nuttiness of coconut before baking. The result is a cookie with a beautifully golden exterior, a soft and chewy center, and a rich toasted-coconut flavor in every bite.

They are also remarkably simple to prepare. With only a handful of everyday ingredients and no complicated decorating techniques, this recipe is perfect when you want a homemade dessert that looks special without requiring hours in the kitchen.

Why You’ll Love These Toasted Coconut Macaroons

Toasting the coconut first is the small extra step that makes this recipe stand out. Gentle heat removes some of the moisture and intensifies the coconut’s natural flavor, giving the finished macaroons a deeper, slightly nutty taste.

These macaroons are:

  • Chewy in the center with lightly crisp, golden edges
  • Rich in coconut flavor without being overly complicated
  • Easy to prepare with simple ingredients
  • Naturally gluten-free when using certified gluten-free ingredients
  • Great for gifting, cookie trays, holidays, or afternoon treats
  • Easy to customize with chocolate, nuts, or citrus flavors

Ingredients

For about 18–20 macaroons, you’ll need:

  • 4 cups sweetened shredded coconut
  • 2 large egg whites
  • 1/3 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 2 tablespoons melted butter, cooled slightly

Optional Chocolate Drizzle

  • 1/2 cup semi-sweet or dark chocolate chips
  • 1 teaspoon coconut oil or shortening

The chocolate is completely optional, but it adds a delicious contrast to the toasted coconut.

Step-by-Step Method

Step 1: Toast the Coconut

Begin by preheating your oven to 325°F (165°C).

Spread the shredded coconut evenly over a large, ungreased baking sheet. Try to keep it in a fairly thin layer so it toasts evenly.

Bake for approximately 5–8 minutes, stirring every couple of minutes.

Keep a close eye on it because coconut can go from golden to burnt surprisingly quickly. You are looking for a light golden-brown color and a fragrant, nutty aroma.

Once toasted, transfer the coconut to a bowl and allow it to cool completely.

Step 2: Prepare the Baking Sheet

Line a baking sheet with parchment paper or a silicone baking mat.

This prevents the macaroons from sticking and makes cleanup much easier.

Step 3: Make the Egg-White Mixture

Place the egg whites in a large mixing bowl.

Whisk them lightly until they become foamy. You don’t need to whip them into stiff peaks. The goal is simply to break them up and create a little volume.

Add the sugar, vanilla extract, and salt.

Whisk until everything is evenly combined.

Step 4: Add the Dry Ingredients

Add the flour and cooled melted butter to the egg-white mixture.

Stir gently until you have a smooth mixture.

The small amount of flour helps give the macaroons enough structure to hold their shape while still maintaining their soft, chewy texture.

Step 5: Fold in the Toasted Coconut

Add the cooled toasted coconut to the bowl.

Using a spatula or wooden spoon, fold everything together until every strand of coconut is coated with the egg mixture.

The mixture should be moist and sticky rather than runny. If you press some of it together with your fingers, it should hold its shape.

Let the mixture sit for about 5 minutes. This gives the coconut a little time to absorb the moisture and makes shaping easier.
