For the Quiche

  • 1 refrigerated or homemade 9-inch pie crust
  • 6 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 8 ounces bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Swiss cheese
  • 1/2 small yellow onion, finely diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 tablespoon chopped fresh parsley or chives, optional

Optional Additions

You can easily make this quiche your own by adding:

  • Diced bell peppers

  • A pinch of red pepper flakes
  • Monterey Jack or Gruyère cheese instead of Swiss

Be careful not to add too many watery vegetables unless they are cooked first. Excess moisture can make the filling soft or watery.

Step 1: Prepare the Crust

Preheat your oven to 375°F (190°C).

Place the pie crust into a 9-inch pie dish and gently press it against the bottom and sides of the dish. If using a refrigerated crust, allow it to sit at room temperature for a few minutes first so it is easier to shape without cracking.

Prick the bottom of the crust several times with a fork.

For an especially crisp crust, line it with parchment paper and fill it with pie weights or dried beans. Bake for approximately 10 minutes.

Remove the parchment and weights, then bake for another 3–5 minutes, just until the crust begins to look lightly golden.

Set the crust aside while preparing the filling.

Step 2: Cook the Bacon

Cut the bacon into small pieces.

Place it in a large skillet over medium heat and cook until it becomes browned and crisp, turning occasionally so it cooks evenly.

Transfer the cooked bacon to a plate lined with paper towels to absorb excess grease.

Leave about 1 tablespoon of bacon fat in the skillet and carefully discard the rest.

The bacon fat adds extra flavor to the onions, but you can use a little olive oil instead if preferred.

Step 3: Sauté the Onion

Add the diced onion to the skillet containing the reserved bacon fat.

Cook over medium heat for about 3–5 minutes, stirring occasionally, until the onion becomes soft and translucent.

Avoid browning it too heavily. The goal is to soften the onion and bring out its natural sweetness.

Remove the skillet from the heat and allow the onions to cool slightly.
